Ingredients
For Dough
2 cups Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
A pinch of carom seeds, अजवाइन
½ tsp Oil, तेल
¾ cup Water, पानी
1 ½ tsp Oil, after kneading, तेल
For Pav Bhaji Stuffing
2 tbsp Ghee, घी
1 inch Ginger (peeled & finely chopped) अदरक
4 no. Green chillies (less spicy & finely chopped) हरी मिर्च
1 cup fresh Green peas, हरे मटर
Salt to taste, नमक स्वादअनुसार
¼ cup Water, पानी
1 large Carrot (peeled & grated) गाजर
Little water, पानी
2 medium Boiled potatoes (peeled & grated) उबले हुए आलू
2 tbsp Butter, cubed, मक्खन
2 heaped tbsp Pav bhaji masala, पाव भाजी मसाला
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
1 tbsp Butter, cubed, मक्खन
¼ cup fresh Coriander leaves, finely chopped, धनिया पत्ता
1 tsp Lemon juice, नींबू का रस
For Cooking Paratha
2 tbsp Ghee, घी
Prepared paratha, तैयार किया हुआ पराठा
For Garnish
Fried chillies, तली हुई मिर्च
Butter, cubed, मक्खन
Process
For Dough
- In a bowl, add whole wheat flour, salt to taste, a pinch of carom seeds, oil, water and knead it into the semisoft dough.
- Add oil and knead it nicely.
- Cover it with damp cloth and keep it aside to rest for a while.
- Divide the dough into medium lemon size balls and make a cavity in the middle.
- Add the spoonful of prepared stuffing in the cavity, seal the edges and roll it with the help of a rolling pin.
- Keep it aside for further use.
For Pav Bhaji Stuffing
- In a pan, add ghee, once it’s hot, add ginger, green chillies and cook it for a minute.
- Add fresh green peas, salt to taste, water, cover it with the lid and let it cook for a while.
- Add carrots, water and saute it for 4-5 minutes.
- Add boiled potatoes, butter, pav bhaji masala, degi red chili powder, salt to taste and mash it well.
- Finish it with butter, fresh coriander leaves, lemon juice and give it a good mix.
- Transfer it to a tray and keep it aside to cool down the temperature.
For Cooking Paratha
- In a tawa, add ghee, once it’s hot, place prepared rolled paratha and cook it evenly on both sides.
- Transfer it to the serving dish, garnish it with fried chillies and butter.
- Serve hot.
