UP Style Aloo Matar गांव वाली आलू मटर की सब्जी Adrak-Lehsun Achaar bonus recipe
Ingredients
For Ginger Garlic Paste
½ inch Ginger (peeled & roughly sliced) अदरक
2-3 no. Garlic cloves, roughly chopped, लहसुन
½ tbsp Tender Coriander stems, chopped, धनिये के डंठल
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
¼ tsp small Mustard seeds, छोटी राई
½ tsp Cumin seeds, जीरा
For Aloo Matar
2-3 tbsp Mustard oil, सरसों का तेल
1 no. Bay leaf, तेज पत्ता
¼ tsp Onion seeds, कलौंजी
½ tsp Cumin seeds, जीरा
¼ tsp Fennel seeds, सौंफ
Prepared Ginger Garlic paste, तयार किया हुआ अदरक लहसुन का पेस्ट
1 large Onion, chopped, प्याज
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Coriander powder, धनिया पाउडर
2 no. medium Tomatoes, chopped, टमाटर
3-4 no. medium Potatoes (peeled & roughly diced) आलू
1 ½ cup fresh Green peas, ताजी हरी मटर
2-3 cups Water, पानी
1 cup Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Ghee, घी
1 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
For Achaar
2 tbsp Mustard oil, सरसों का तेल
A pinch of asafoetida, हींग
A pinch of cumin seeds, जीरा
A pinch of fennel seeds, सौंफ
A pinch of mustard seeds, छोटी राई
A pinch of onion seeds, कलौंजी
A pinch of Fenugreek seeds, मेथी दाना
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
½ tsp Dry mango powder, आमचूर पाउडर
½ tsp Lemon juice, नींबू का रस
7-8 no. Garlic cloves, roughly crushed, लहसुन
½ inch Ginger (peeled & roughly crushed) अदरक
5-6 no. Green chillies, slit into middle, हरी मिर्च
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
- In a mortar pestle, add ginger, garlic, tender coriander stems, green chillies, salt to taste, small mustard seeds, cumin seeds and grind it coarsely.
- Keep it aside for further use.
For UP Style Aloo Matar
- In a kadai, add mustard oil, once it’s hot, add bay leaf, onion seeds, fennel seeds, cumin seeds and let it splutter.
- Add prepared ginger garlic paste and saute it for a minute.
- Add onion and saute it well until golden in color.
- Add degi red chili powder, turmeric powder, coriander powder and cook it for a minute.
- Add tomatoes, potatoes and cook it for a while until half cooked.
- Add water and give it a good mix, cover it with the lid and cook it for 10-12 minutes on medium flames.
- Mash the one piece of potato, add water, salt to taste, ghee, coriander leaves and simmer it until thick..
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti and prepared achaar.
For Achaar
- In a pan, add mustard oil, once it’s hot, turn off the flames, add a pinch of asafoetida, cumin seeds, fennel seeds, small mustard seeds, onion seeds, fenugreek seeds and mix it well.
- Transfer it to a bowl, add garlic, ginger, green chillies, salt to taste, sugar, dry mango powder, lemon juice and give it a mix.
- Leave it aside for 30-40 minutes for enhancing the flavors.
- Transfer it to a serving bowl, serve it with prepared aloo matar and roti.
