Chunky Soya Pulao सोया वडी का मसालेदार पुलाव Achaari Raita bonus
Ingredients
For Soya Pulao
2-3 tbsp Oil, तेल
1 ½ tbsp Ghee, घी
2 large Onions, sliced, प्याज
2 no. Bay leaf, तेज पत्ता
1 ½ inch Cinnamon stick, दालचीनी
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
2 tbsp Tender Coriander with stem, chopped, धनिये के डंठल
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 cups Curd, beaten, दही
2 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
2 tbsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
2 cups Soya chunks, सोया वड़ी
2 large Carrots (peeled & roughly diced) गाजर
½ cup fresh Green peas, हरे मटर
4 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
2 medium Tomatoes, cut into diced, टमाटर
700 gms Sella basmati rice (soaked for 30 minutes) भीगे हुए सेला बासमती चावल
1 cup Water, पानी
2 tbsp Ghee, घी
Salt to taste, नमक स्वादअनुसार
A pinch of sugar, चीनी
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
2 tbsp fresh Coriander leaves, roughly chopped, धनिया पत्ता
For Raita
1 tbsp Cumin seeds, जीरा
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp White sesame seeds, सफेद तिल
1 ¼ cups Curd, beaten, दही
2 tbsp Pickle, अचार
½ cup Cheese, grated, चीज़
For Garnish
Fried onions, तले हुए प्याज
Mint sprig, पुदीना पत्ता
Coriander sprig, धनिया पत्ता
Process
For Soya Pulao
- In a handi, add oil, ghee, once it’s hot, add onions and saute it until golden in colour.
- Add bay leaf, cinnamon stick, green chillies, tender coriander stems and saute it for a
- Add ginger garlic paste, curd, turmeric powder, degi red chili powder, coriander powder, salt to taste and let it cook for until oil separates from the gravy.
- Add soya chunks, carrots and saute it for 7-8 minutes until it’s cooked well.
- Add fresh green peas, water, salt to taste, tomatoes and give it a quick boil.
- Add soaked sella basmati rice, water, ghee, salt to taste, a pinch of sugar and give it a gentle mix.
- Cover it with a lid and let it cook for 12-15 minutes on low to medium flames.
- Finish it with crushed dry fenugreek leaves and fresh coriander leaves.
- Transfer it to a serving dish, garnish it with fried onions, mint sprig and coriander sprig.
- Serve hot with prepared raita.
For Raita
- In a pan, add cumin seeds, salt to taste, white sesame seeds and roast it for a minute.
- Transfer it to a bowl and keep it aside to cool down at room temperature.
- Add curd, pickle, cheese and give it a good mix.
- Transfer it to a serving bowl and serve with prepared soya pulao.
