Ingredients

For Paste

4 medium Tomatoes, cut into half, टमाटर

2 large Onion, cut into half, प्याज

Salt to taste, नमक स्वादअनुसार

1 tsp Sugar, चीनी

1 tbsp Coriander powder, धनिया पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 tbsp Oil, तेल

Little water, पानी

1 cup Curd, beaten, दही

8-10 Cashewnut, काजू

 

For Vegetable

2 tbsp Butter, cube, मक्खन

1 large Carrot, cut into diamond, गाजर

Little water, पानी

Salt to taste, नमक स्वादअनुसार

1 cup Cauliflower, medium size florets, फूलगोभी

 

For Gravy

2-3 tbsp Butter, cube, मक्खन

A pinch of asafoetida, हींग

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

Prepared Paste, तैयार किया हुआ पेस्ट

Little water, पानी

4-5 French beans, chopped, बीन्स

½ small Capsicum, cut into cube, शिमला मिर्च

Cooked Veggies, पके हुए सब्जी

⅓ cup Paneer, cut into small cubes, (optional) पनीर

½ tsp Honey, शहद

 

For Tadka

1 tbsp Butter, cube, मक्खन

½ inch Ginger, chopped, अदरक

2 Green chillies, chopped, हरी मिर्च

2 tbsp Coriander leaves, chopped, धनिया पत्ता

1 tsp Dry Fenugreek leaves, कसूरी मेथी

Process

For Paste

  • In a large bowl, add tomatoes, onion, salt to taste, sugar, coriander powder, turmeric powder, degi red chilli powder, oil, little water, curd and cashew nut mix well.
  • Transfer it into a grinder jar and grind it into a smooth puree.

 

For Vegetable

  • In a deep bottom pan, add butter once it’s melted, add carrot and saute it well.
  • Add a little water, salt to taste and mix it well. Cover it with the lid and cook until it becomes soft.
  • Add cauliflower florets and let it cook for some time.

 

For Gravy

  • In a deep bottom pan, add butter once it’s melted, add a pinch of asafoetida, degi red chilli powder and saute it well.
  • Add prepared paste and keep sauteing for 15-20 minutes.
  • Add a little water and mix it well.
  • Add french beans, capsicum mix it well. Add cooked veggies and mix everything well.
  • Add paneer and let it cook for 5-7 minutes on medium flame.
  • Finish it with honey and mix it well.
  • Transfer the prepared tadka into the gravy and mix it well.
  • Serve hot with roti.

 

For Tadka

  • In a non-stick pan, add butter once it’s melted, add ginger, green chilli, coriander leaves and saute it well.
  • Add dry fenugreek leaves and mix it well. Keep aside for further use.
