Ingredients

For Sauteing Chicken

2 tbsp Ghee, घी

1 kg Chicken (thighs & drumsticks) चिकन

Salt to taste, नमक स्वादअनुसार

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

 

For Frying Potatoes

½ cup Oil for frying, तलने के लिए तेल

2 large Potatoes (peeled & cut into quarters) आलू

2 large Onions, cut into diced, प्याज

 

For Curd Mixture

1 cup Curd, beaten, दही

½ tsp Turmeric powder, हल्दी पाउडर

1 heaped tbsp Coriander powder, धनिया पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tsp Cumin powder, जीरा पाउडर

2 no. Green cardamom, हरी इलायची

1 no. Black cardamom, बड़ी इलायची

7-8 no. Black peppercorns, काली मिर्च के दाने

A pinch of fennel seeds, सौंफ़

2-3 tbsp fresh Mint leaves, roughly chopped, पुदीना पत्ता

½ tbsp Tender Coriander stems, finely chopped, धनिये के डंठल

3-4 tbsp Curd, beaten, दही

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

 

For Chicken Pudina Handi

2 tbsp Remaining excess oil, बचा हुआ तेल

2 no. Bay leaf, तेज पत्ता

¼ inch Cinnamon stick, दालचीनी

Sauteed chicken, भुना हुआ चिकन

Prepared Curd mixture, तैयार किया हुआ दही का मिश्रण

fried Potatoes & onions, तले हुए आलू और प्याज

Salt to taste, नमक स्वादअनुसार

4 no. Green chillies, slit into middle, हरी मिर्च

2-3 tbsp Remaining oil, बचा हुआ तेल

 

2-3 tbsp fresh Mint leaves, roughly torn, पुदीना पत्ता

 

Other Ingredients

Oil (for seasoning handi) तेल

Dough (for dum) गुंधा हुआ आटा

 

For Garnish

Mint sprig, पुदीना पत्ता

Process

For Sauteing Chicken

  • In a handi, add ghee, once it’s hot, add chicken, salt to taste, ginger garlic paste and saute it for a while until half cooked.
  • Transfer it to a tray or plate and keep it aside for further use.

 

For Frying Potatoes

  • In a handi or kadai, add oil, once it’s hot, add potatoes and fry them for a while.
  • Add onions and cook for 3-4 minutes until translucent.
  • Transfer it to a bowl and keep it aside for further use.

 

For Curd Mixture

  • In a bowl, add curd, turmeric powder, coriander powder, degi red chili powder, cumin powder, green cardamom, black cardamom, black peppercorns, a pinch of fennel seeds, fresh mint leaves, tender coriander stems, curd, ginger garlic paste and give it a good mix.
  • Keep it aside for further use.

 

For Chicken Pudina Handi

  • In an earthen pot or handi, add remaining excess oil, once it’s hot, add bay leaf, cinnamon stick, sauteed chicken and saute it for a minute.
  • Add prepared curd mixture, fried potatoes & onions, salt to taste and stir it well.
  • Add green chillies, remaining oil, fresh mint leaves and mix it well.
  • Take a dough and seal the edges of the pot, cover it with a lid and cook it for 20-25 minutes.
  • Turn off the flames and let it rest for 5-6 minutes.
  • Transfer it to a serving dish and garnish it with mint sprig.
  • Serve hot with roti or naan.
