
Spicy Paneer Kathi Roll पनीर भुना काठी रोल चटपटा पनीर रोल फ़्रैंकी Frankie
Ingredients
For Ginger Garlic Paste
3 fresh Green chilli, हरी मिर्च
1 inch Ginger, slice, अदरक
5-6 Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Bhuna Masala
½ tbsp Shahi jeera, शाही जीरा
1 ½ tbsp Coriander seeds, धनिया की बीज
¾ tbsp Black peppercorns, काली मिर्च के दाने
2-3 Cloves, लौंग
2 Green cardamom, हरी इलायची
1 Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
For Paneer Bhuna
2-3 tbsp Ghee, घी
½ tsp Shahi jeera, शाही जीरा
Prepared Ginger Garlic paste, तैयार किया हुआ अदरक लहसुन का पेस्ट
2 large Onion, chopped, प्याज
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ cup Curd, beaten, दही
2 tbsp Prepared Bhuna Masala, तैयार किया हुआ भूना मसाला
Little water, पानी
2 medium size Capsicum, slice, शिमला मिर्च
400 gms Paneer, cut into,strips, पनीर
2 tbsp Coriander leaves, chopped, धनिया पत्ता
½ inch Ginger, julienned, अदरक
For Dough
½ cup Refined flour, मैदा
¼ cup Whole wheat flour, आटा
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 tsp Oil, तेल
Water, पानी
1 tsp Oil, तेल
Other Ingredients
1 tbsp fresh Mint leaves, chopped, पुदीना पत्ता
½ tsp Oil, तेल
½ tsp Ghee, घी
For Assembling
Hung curd, टंगा हुआ दही
Prepared paneer bhuna, तैयार किया हुआ पनीर भूना
For Garnish
Tomato, wedge, टमाटर
Green chilli, slit, हरी मिर्च
Lemon wedge, नींबू की फलियां
Coriander sprig, धनिया पत्ता
Process
For Ginger Garlic Paste
- In a mortar pestle, add green chilli, ginger, garlic cloves and salt to taste and make a smooth paste out of it.
For Bhuna Masala
- In a non-stick pan, add Shahi jeera, Coriander seeds, Black peppercorns, Cloves, Green cardamom.
- Add Black cardamom and Salt to taste. Dry roast on low flame until the spices turn aromatic.
- Transfer it into a grinder jar and grind it coarsely. Keep it aside for further use.
For Paneer Bhuna
- In a deep bottom pan, add ghee once it’s hot, add shahi jeera, prepared ginger garlic paste, onion and saute on medium flame until it’s light brown in color.
- Add degi red chilli powder and saute for a minute.
- Add curd and mix it well. Add prepared bhuna masala, little water and mix it well.
- Cover it with the lid and cook on medium flame for 4-5 minutes.
- Add capsicum, paneer and mix everything well. Cover it with the lid.
- Cook on medium flame for 5 more minutes and finish it with coriander leaves and ginger.
For Dough
- In a parat, add refined flour, whole wheat flour, salt to taste, sugar, oil.
- Add water as required and knead a smooth soft dough.
- Cover the dough and keep it aside for 5 minutes.
For Roti
- Take a small portion of the dough and roll it thin using a rolling pin.
- Add mint leaves and gently press.
- Heat a flat pan and roast it on both sides, apply some oil and cook until light brown from both sides. Keep aside for further use.
For Assembling
- Take a prepared roti, spread some hung curd all the sides properly.
- Sprinkle some prepared bhuna masala.
- Heat a flat pan on medium heat, add some ghee then place the roti, add prepared paneer bhuna.
- Now, remove the roti on a plate, roll it tightly.
- Garnish it with tomato, green chilli, lemon wedge and coriander sprig.
