Hyderabadi style 2 Egg Curry recipes हैदराबादी अंडा करी Egg Masala Recipe - Ranveer Brar

Ingredients

For Hyderabadi Style Egg Curry

For Green paste

2 cups Coriander leaves, धनिया पत्ता

¼ cup fresh Mint leaves, पुदीना  पत्ता

5-6 Garlic cloves, लहसुन

2 inch Ginger, slice, अदरक

4-5 Green chillies, हरी मिर्च

Salt to taste, नमक स्वादअनुसार

1 ½ tbsp Oil,  तेल

2 no Tomato, cut into quarter, टमाटर

 

For Curry

2 tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

1 medium Onion, chopped, प्याज

Prepared Green Paste, तैयार किया हुआ हरा पेस्ट

⅓ cup Curd, beaten, दही

1 tbsp Coriander powder, धनिया पाउडर

1 tsp Sugar, चीनी

1 tbsp Coriander leaves, chopped, धनिया पत्ता

6 hard-boiled Eggs, अंडे

 

For Garnish

Degi red chilli powder, देगी लाल मिर्च पाउडर

Coriander sprig, धनिया पत्ता

 

Process

For Green Paste

  • In a grinder jar add coriander leaves, mint leaves, garlic cloves, ginger, salt, oil, tomato and grind it into a fine paste then place it aside.

 

For Curry

  • In a pan heat oil and add cumin seeds, let them crackle, now add chopped onion and saute until translucent.
  • Then add prepared green paste, curd, coriander powder and saute until the oil starts separating.
  • Now add water, sugar and bring it to a boil then add chopped coriander leaves, boiled eggs and continue cooking for another 2 minutes.
  • Switch off the flames and serve hot then garnish with degi red chilli powder and coriander leaves.

For Hyderabadi Style Egg Masala

1 ½ tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

2 Garlic cloves, chopped, लहसुन

1 inch Ginger, chopped, अदरक

2 large Onion, chopped, प्याज

2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1½ tsp Coriander powder, धनिया पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

¼ tsp Asafoetida, हींग

1 medium Tomato, chopped, टमाटर

¼ cup Tomato puree, टाॅमेटो प्यूरी

Salt to taste, नमक स्वादानुसार

½ cup Water, पानी

1 fresh Green chilli, chopped, हरी मिर्च

5 whole Eggs, अंडे

 

For Tempering

1 tbsp Oil, तेल

1 tsp Mustard seeds, सरसों के बीज

2-3 Dry red chillies, सूखी लाल मिर्च

1 sprig Curry leaves, कड़ी पत्ता

For Green Paste

  • In a grinder jar add coriander leaves, mint leaves, garlic cloves, ginger, salt, oil, tomato and grind it into a fine paste then place it aside.

 

For Curry

For Hyderabadi Style Egg Masala

  • In pan heat oil then add cumin seeds, garlic, ginger and saute until nutty brown.
  • Now add onion and saute until light brown then add degi red chilli powder, coriander powder, turmeric powder, asafoetida and continue cooking until fragrant.
  • Add chopped tomato, tomato puree, salt and continue cooking until everything is properly cooked.
  • Now add some water, fresh green chilli and stir it will then crack in the eggs and cover and cook to your liking.
  • Remove the lid and pour the hot tempering on the eggs and serve hot.

 

For Tempering

  • In a small pan, heat oil and add mustard seeds, dry red chillies and let them burn a little.

Now add curry leaves and switch off the flames
