spicy Lauki & Tinda Sabji कभी ना बनाई होगी ऐसी मज़ेदार लौकी – टिंडे की सब्जी

Ingredients
For Roasting Vegetables
1 no. Garlic cloves, slice into half, लहसुन
Oil for greasing, तेल
1 large Bottle gourd, लौकी
1 kg Round gourd, टिंडा
2 medium Onions, प्याज
3 large Tomatoes, टमाटर
For Ginger Garlic paste
5-6 no. Garlic cloves, लहसुन
1 inch Ginger (peeled & sliced) अदरक
3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Lauki aur Tinde ka Bharta
2-3 tbsp Mustard oil, सरसों का तेल
2-4 Fenugreek seeds, मेथी दाना
1 tsp Cumin seeds, जीरा
Prepared ginger garlic paste, अदरक लहसुन का पेस्ट
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Roasted Vegetables, भुनी हुई सब्ज़ियाँ
1 heaped tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
Salt to taste, नमक स्वादअनुसार
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Garnish
Fried onions, तले हुए प्याज
2 no. Green chillies less spicy & slides thin, हरी मिर्च
½ inch Ginger (peeled & julienned) अदरक
Coriander sprig, धनिया पत्ता
Process
For Roasting Vegetables
- Make a slit in Bottle gourd and stuff with garlic clove.
- Brush bottle gourd with oil, roast it for a while until it is charred and cooked.
- Peel the skin, chop it well and keep it aside for further use.
- Take round gord, onions, tomatoes, roast them well until it is charred and cooked.
- Peel the skin, chop it well and keep it aside for further use.
For Ginger Garlic Paste
- In a mortar pestle, add garlic, ginger, green chillies, salt to taste and grind it into coarse paste.
- Keep it aside for further use.
For Lauki aur Tinde ka Bharta
- In a handi, add mustard oil, once it’s smoky hot, add fenugreek seeds, cumin seeds, prepared ginger garlic paste and cook for a minute.
- Add turmeric powder, degi red chili powder, roasted vegetables, tender coriander stems and let it saute it for 7-8 minutes on medium flames.
- Finish it with salt to taste, fresh coriander leaves and mix it well.
- Transfer it to a serving dish, garnish it with fried onions, green chillies, ginger and coriander sprig.
- Serve hot with roti.
