
Ingredients
For Pav Bhaji Masala
30-35 gm Dry red chilli, सूखी लाल मिर्च
50-55 gm Coriander seeds, धनिया के बीज
15-20 gm Cumin seeds, जीरा
10-15 gm Fennel seeds, सौंफ
10gms Cinnamon stick, दालचीनी
10 gm Black cardamom seeds, बड़ी इलायची
5 gm Bay leaf, तेजपत्ता
10 no Cloves, लॉन्ग
10 gm Black peppercorn, काली मिर्च के दाने
2 no Star anise, चक्र फूल
3-4 no Green cardamom, हरी इलायची
5 gm Salt, नमक स्वादानुसार
5 gm Dry ginger powder, सोंठ पाउडर
10-15 gm Dry mango powder, अमचूर पाउडर
5 gm Turmeric powder, हल्दी पाउडर
½ tsp Asafoetida, हींग
½ Nutmeg, जायफल
Process
For Pav Bhaji Masala
- Heat a pan on low heat and add dry red chilli, coriander seeds, cumin seeds, fennel seeds, cinnamon stick, black cardamom seeds, bay leaf, cloves, black peppercorns, Star anise, green cardamom, salt and roast them until fragrant
- Remove in a bowl then add dry ginger powder, dry mango powder, turmeric powder, asafoetida, nutmeg and let it cool.
- Then grind it into a powder and sieve it through a medium sieve. Set aside for further use.
