Lauki Kofta Recipe लौकी के कोफ़्ते

Lauki Kofta Recipe  लौकी के कोफ़्ते Recipe - Ranveer Brar

Ingredients

For  Making kofta

2oo gms Bottle Gourd, grated, Squeezee, लौकी

Salt To Taste , नमक

¼ tsp Asafetida, हींग

¼ tsp Turmeric Powder, हल्दी पाउडर

½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

2 Green Chilli , chopped ,  हरी मिर्च

2 tbsp Coriander Leaves , chopped, धनिया पत्ती

2 tbsp Moong Dal, Soaked, मूंग दाल

2 tbsp Curd, thick , दही

¼ cup Gram Flour, बेसन

1 tsp Soda, सोडा

1 tbsp Oil , तेल

Oil For Shallow Fry,  तेल

 

For Gravy

2 tbsp Ghee , घी

½ tsp Cumin Seeds, जीरा

5-6 Garlic, Chopped , लहसुन

1 inch Ginger, Chopped , अदरक

2 Green Chilli, Chopped , हरी मिर्च

2 Medium Onion, Sliced ,प्याज

½ tsp Asafetida, हींग

1 tsp Coriander Powder, धनिया पाउडर

1 tsp Turmeric Powder, हल्दी पाउडर

1 tsp Red Chilli Powder, लाल मिर्च पाउडर

1 Tomato, Chopped , टमाटर

⅓ cup Curd , दही

½ tsp Red Chilli Powder , लाल मिर्च पाउडर

1 tsp Coriander Powder , धनिया पाउडर

Salt To Taste , नमक स्वादअनुसार

½ tsp Sugar , चीनी

1 tbsp Coriander leaves , धनिया पत्ती

 

Process

Making lauki kofta

  • Peel the lauki /bottle gourd. Grate it.
  • Squeeze the grated lauki and collect the juice in a bowl or mug. Keep the juice aside for later use.
  • Mix all the ingredients for making the koftas with the grated lauki except oil.
  • Make small round shaped balls or patties.
  • Heat oil in a frying pan. Shallow Fry the lauki kofta in the oil, till they are golden brown on all sides.
  • Drain the fried kofta on kitchen towel so that the extra oil is absorbed.

Making lauki kofta gravy

  • In a kadai, heat ghee add cumin seeds and let it splutter.
  • Add garlic, ginger, green chilli and saute well.
  • Add onion and saute till translucent. Add asafetida, coriander powder, turmeric powder, red chilli powder mix well.
  • Add tomato and cook till it gets soft and start leaving oil from the edged.
  • In a bowl, add curd, red chilli powder, coriander powder mix well.
  • Transfer this mixture into the kadai and mix well.
  • Add the lauki juice, sugar and about 1 cup of water.
  • Stir and simmer for 10-12 minutes on low flame. Lastly, add the koftas.
  • Switch off the flame, cover and let them be in the curry for a few minutes so that koftas will absorb all the flavours from the curry.
  • Garnish with coriander leaves and serve lauki kofta hot with rotis, naan or jeera rice.
