One of the healthiest recipes in our Indian cuisine is Khichdi. And there is no one method to make it..In fact there are several variations across the country. Here are 4 of them. How many more do you know?
Ingredients
For Roasting Moong Dal
1 cup Yellow Moong dal, पीली मूंग दाल
1 ½ tsp Ghee, घी
For Khichdi
1 cup Roasted yellow moong dal, भुनी हुई पीली मूंग दाल
2 cups Govind bhog rice (any short grain rice) गोविंद भोग चावल
5-6 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
1 Green chili, broken into half, हरी मिर्च
For Plain Khichdi
½ tbsp Ghee, घी
½ tsp Cumin seeds, जीरा
¼ tsp Asafoetida, हींग
⅓ cup Water, पानी
1 cup Prepared Khichdi, तैयार की हुई खिचड़ी
For Garnish
1 tsp Ghee, घी
Coriander sprig, धनिया पत्ता
Papad, पापड़
For Masala Khichdi
1 tbsp Oil, तेल
6-7 Black peppercorns, काली मिर्च के दाने
1 tsp Cumin seeds, जीरा
A pinch of asafoetida, हींग
½ inch Ginger, chopped, अदरक
1 medium size Carrot, dice, गाजर
1 medium size Tomato, chopped, टमाटर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
4-5 French beans, chopped, फ्रेंच बींस
1 ½ cup Water, पानी
2 tbsp fresh Green peas, हरे मटर
Salt to taste, नमक स्वादअनुसार
2 Green chillies, chopped, हरी मिर्च
1 ¼ cup Prepared Khichdi, तैयार की हुई खिचड़ी
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
For Bisibele Bhat Style Paste
1 ½ tsp Ghee, घी
1 tsp Chana dal, चना दाल
1 tsp White urad dal, उड़द दाल
1 ½ tbsp Coriander seeds, धनिया की बीज
1 tsp Cumin seeds, जीरा
¼ tsp Dry fenugreek seeds, मेथी दाना
2 Green cardamom, हरी इलायची
2-4 Cloves, लॉन्ग
8-9 Black peppercorns, काली मिर्च के दाने
1 inch Cinnamon stick, दालचीनी
½ cup fresh Coconut, grated, नारियल
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Asafoetida, हींग
½ tsp Turmeric powder, हल्दी पाउडर
1 inch Ginger, peeled (optional) अदरक
For Bisibele Bhat Style Khichdi
1 ½ tsp Oil, तेल
2-4 Button chillies, बटन मिर्च
1 sprig Curry leaves, करी पत्ते
¼ cup Prepared Paste, तैयार किया हुआ पेस्ट
⅓ cup Water, पानी
2 tbsp Carrot, peeled, dice, गाजर
2 tbsp French beans, chopped, फ्रेंच बींस
1 ¼ cup Prepared Khichdi, तैयार की हुई खिचड़ी
½ tsp Sugar, चीनी
¼ cup Water, पानी
For Bisibele Bhat Style Tadka
1 tbsp Oil, तेल
2-3 Button chilli, बटन मिर्च
7-8 Cashewnut, काजू
salted Boondi, खारी बूंदी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Roasting Moong Dal
- In a pan, add yellow moong dal and roast it on medium flame for 4-5 minutes.
- Now, add ghee and roast until moong dal turns golden in color.
- Transfer it into a bowl and keep aside for further use.
For Khichdi
- Now, take any type of short grain rice. Wash it 2-3 times.
- In a large bowl, add roasted moong dal, washed rice and water.
- Transfer the moong dal and rice mixture into a pressure cooker and add water gradually.
- Now, add salt to taste, turmeric powder and green chillies.
- Close the lid and cook until 3-4 whistles.
For Plain Khichdi
- In a shallow pan, add oil, once it gets hot add cumin seeds, asafoetida let it splutter well.
- Add water. Now, add prepared plain khichdi and mix everything well.
- Now, cook for a while, transfer it into a serving dish, garnish with coriander sprig and papad.
- Serve hot.
For Masala Khichdi
- In a shallow pan, add oil, once it gets hot, add black peppercorns, cumin seeds, asafoetida and ginger. Sauté it for 15-20 seconds.
- Now, add carrots and cook it for 1-2 minutes.
- Add tomatoes, degi red chili powder, coriander powder, french beans, water, green peas, salt to taste and green chillies.
- Now, add prepared plain khichdi and coriander leaves. Mix everything well.
- Cook until all vegetables are well cooked, once vegetables cook well, switch off the flame.
- Transfer it into a serving dish. Garnish with coriander sprig and serve hot.
For Bisi Bele Bhaat Style Paste
- In a shallow pan, add ghee, once it gets hot add chana dal, urad dal, coriander seeds, cumin seeds. Sauté it for 5-10 seconds.
- Now, add fenugreek seeds, cardamom, cloves, black peppercorn and cinnamon sticks. Roast it for 10-15 seconds or until fragrant.
- Transfer it into a bowl and add coconut, degi red chili powder, asafoetida, turmeric powder and ginger.
- Transfer this mixture in a blender and blend until smooth in texture.
For Bisi Bele Bhaat Style Khichdi
- Now, in a saucepan, add oil, button chillies, curry leaves and prepared paste.
- Saute it for 25-30 seconds.
- Now, add water, carrot, french beans and prepared plain khichdi.
- Add a pinch of sugar and mix everything very well.
- Cook for a while and switch off the flame.
- Transfer it into a serving bowl. Garnish with coriander sprig and serve hot.
For Bisi Bele Bhaat Style Tadka
- In a sauce pan add oil. Once it gets hot add button chillies and cashew nuts.
- Pour the prepared tadka on khichdi.
For Bengali Style Khichdi
- In a shallow pan add oil, cauliflower and potatoes, Roast until light golden in color.
- Transfer it into a bowl and keep aside for further use.
For Bengali Style Paste
- Now, in a bowl add ginger paste, salt to taste, turmeric powder, cumin powder, asafoetida, degi red chili powder, water and mix well.
For Bengali Style Khichdi
- In a shallow pan add oil. Once it gets hot add cloves, cardamom, black peppercorn, bay leaf, cinnamon stick and prepared paste. Sauté until the raw smell of spices is gone.
- Now, add green chillies, coconut, tomato, sauteed cauliflower and potatoes, green peas and a pinch of sugar. Mix everything well.
- Add water and prepared plain khichdi. Mix it well.
- Once all the vegetables cook well, switch off the flame.
- Serve hot.
For Tempering Bengali Khichdi
- In a sauce pan add oil. Once it gets hot add raisins and coconut.
- Pour the tadka on the prepared khichdi.
