Try my favourite Spicy Chilli Garlic Chicken—tawa-cooked for that perfect smoky flavour, bold garlic heat & just the right kick of spice. Paired with a fiery pulao, this is one of those meals where every bite builds character—simple technique, big flavour, no shortcuts.
Ingredients
For Chilli Garlic Paste
10-12 no. dry Bedgi red chillies (soaked for 2 hrs) भिगोई हुई बेडगी लाल मिर्च
7-8 no. Garlic cloves, लहसुन
For 1st Marination
1 kg Chicken thighs (boneless) चिकन
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
1 tbsp Lemon juice, नींबू का रस
For 2nd Marination
Marinated chicken, मैरीनेटेड चिकन
2-3 tbsp fresh Mint leaves (finely chopped), पुदीना पत्ता
2 tbsp Tender Coriander stems (finely chopped), धनिया के डंठल
3-4 heaped tbsp Prepared Chilli Garlic paste, तैयार की हुई मिर्च लहसुन की पेस्ट
1 tsp Lemon juice, नींबू का रस
Salt to taste, नमक स्वादअनुसार
For Chutney
2-3 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
½ cup Walnuts, अखरोट
2 tbsp fresh Mint leaves, पुदीना पत्ता
1 tbsp Tender Coriander stems with roots (roughly chopped), धनिया के डंठल
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
½ inch Ginger (peeled & sliced) अदरक
For Cooking Chicken
1-2 tbsp Oil, तेल
Marinated chicken, मैरीनेटेड चिकन
For Pulao
Remaining excess oil, बचा हुआ तेल
1 heaped tbsp Prepared Chilli Garlic paste, तैयार की हुई मिर्च लहसुन की पेस्ट
2-3 cups Water, पानी
2 cups Sella basmati rice (soaked for 30 minutes) भिगोए हुए सेला बासमती चावल
Salt to taste, नमक स्वादअनुसार
Prepared roasted garlic oil, भुना हुआ लहसुन का तेल
For Roasting Garlic
2-3 tbsp Oil, तेल
¼ cup Garlic cloves (finely chopped), लहसुन
For Finishing Chicken
2-3 tbsp Butter (cubed), मक्खन
Cooked chicken, पका हुआ चिकन
For Garnish
Roasted garlic, भुना हुआ लहसुन
Lemon wedges, नींबू की फांक
Coriander sprig, धनिया पत्ता
Process
For Chilli Garlic Paste
- In a bowl, add soaked bedgi red chillies, garlic, transfer it into the mixer grinder jar and grind it into the smooth fine paste.
- Keep it aside for further use.
For 1st Marination
- In a bowl, add chicken, ginger garlic paste, salt to taste, lemon juice and marinate well.
- Keep it aside for a while.
For 2nd Marination
- In a bowl, add marinated chicken, fresh mint leaves, tender coriander stems, prepared chilli garlic paste, lemon juice, salt to taste and marinate well.
- Keep it aside for a while.
For Chutney
- In a bowl, add green chillies, walnuts, fresh mint leaves, tender coriander stems with roots, salt to taste, oil and ginger.
- Transfer it into the mixer grinder jar and grind into the smooth fine paste.
- Keep it aside for further use.
For Cooking Chicken
- In a shallow tawa or pan, add oil, once it’s hot, add marinated chicken and cook for 10-12 minutes or until it’s tender.
- Flip the chicken in intervals and cook well.
- Transfer it into the tray and keep it aside for further use.
For Pulao
- In a shallow tawa or pan, add remaining excess oil, once it’s hot, add prepared chilli garlic paste and cook for 2-3 minutes.
- Add water and give it a quick boil.
- Add soaked sella basmati rice, salt to taste, give it a good mix and cover it with the cooking wrap or lid.
- Now, cook the pulao for 15-20 minutes or until it’s cooked.
- Finish it with roasted garlic oil and give it a good mix.
- Transfer it into the serving dish and garnish it with lemon wedge and coriander sprig.
- Serve hot with prepared tawa chilli garlic chicken and chutney.
For Roasting Garlic
- In a pan, add oil, once it’s hot, add garlic and cook for 2 minutes on high flames or until garlic turns light brown in colour.
- Transfer it into the bowl and keep it aside for further use.
For Finishing Chicken
- In a pan, add butter, once it melts, add cooked chicken and sear it on high flames for 2-3 minutes.
- Transfer it into the serving dish and garnish it with roasted garlic, lemon wedges and coriander sprig.
- Serve hot with prepared pulao and chutney.
