Ingredients
For Marination
5 large Potatoes (peeled & cut into thick slices) आलू
½ tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Ghee, घी
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
For Paste
1 cup Fried onions, तले हुए प्याज
12-15 no. Cashew Nuts, काजू
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
Little water, पानी
2 tbsp Tender Coriander stem with roots, धनिये के डंठल और जड़ें
For Frying
Oil for frying, तलने के लिए तेल
Marinated Potatoes, मैरीनेटेड आलू
For Changezi Aloo
⅓ cup Remaining excess oil, बचा हुआ तेल
2 no. Bay leaf, तेज पत्ता
¼ inch Cinnamon stick, दालचीनी
2 no. Green cardamom, हरी इलायची
2 no. Black peppercorns, काली मिर्च के दाने
2 no. Cloves, लौंग
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ cups fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 cup Curd, beaten, दही
Prepared paste, तयार की हुई पेस्ट
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 heaped tsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
1 ½ cups Water, पानी
Fried potatoes, तले हुए आलू
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Marination
- In a bowl, add potatoes, degi red chili powder, turmeric powder, salt to taste, ghee, ginger garlic paste and mix it well.
- Keep it aside to marinate for a while.
For Paste
- In a bowl, add fried onions, cashew nuts, salt to taste, turmeric powder, degi red chili powder, coriander powder, little water, tender coriander stems and mix it well.
- Transfer it to a mixer grinder jar and grind it into smooth paste.
- Keep it aside for further use.
For Frying
- In a kadai or handi, add oil, once it’s hot, add marinated potatoes and fry them until it’s half cooked.
- Transfer it to an absorbent paper and keep it aside for further use.
For Changezi Aloo
- In a cast iron tawa, add remaining excess oil, once it’s hot, add bay leaf, cinnamon stick, green cardamom, black peppercorns, cloves, ginger garlic paste and cook it for a minute.
- Add fresh tomato puree, curd and saute it for a while until cooked well.
- Add prepared paste, degi red chili powder, coriander powder, salt to taste and cook it for 7-8 minutes on medium flame.
- Add sugar, water to adjust the consistency and cook it until it thickens.
- Add fried potatoes and give it a good mix.
- Finish it with crushed dry fenugreek leaves, transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with tandoori roti or naan.
