
Ingredients
For Marination
800 gms Chicken,( thigh/ drumstick) चिकन
Salt to taste, नमक स्वादनुसार
1 tbsp Pickle oil, अचार का तेल
⅓ cup Curd, beaten, दही
For Ginger Garlic Paste
1 Green chili, broken into half, हरी मिर्च
½ inch Ginger, peeled, sliced, अदरक
4-5 Garlic cloves, लहसुन
Salt to taste, नमक स्वादनुसार
For Achari Masala
1 tbsp Fennel seeds, सौंफ
½ tbsp Cumin seeds, जीरा
¼ tsp Fenugreek seeds, मेथी दाना
½ tsp Mustard seeds, सरसों के बीज
½ tsp Nigella seeds, कलौंजी
3 no Dry Kashmiri red chilli, सूखी कश्मीरी लाल मिर्च
1 tsp Dry mango powder, अमचूर पाउडर
¼ tsp Sugar, चीनी
For Frying Chillies
1 ½ tbsp Mustard oil, सरसों का तेल
3 large Green chillies, slit or picador chilli, हरी मिर्च
Prepared Achari Masala, तैयार किया हुआ अचारी मसाला
Salt to taste, नमक स्वादनुसार
For Tempering
3 medium size Onion, sliced, प्याज़
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
Marinated Chicken, मैरिनेटेड चिकन
½ tbsp Coriander powder, धनिया पाउडर
1 cup Fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 ½ tbsp Prepared Achari Masala, तैयार किया हुआ अचारी मसाला
½ tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Pickle oil, अचार का तेल
½ tbsp Mustard oil, सरसों का तेल
½ cup Water, पानी
1 tbsp Prepared Achari Masala, तैयार किया हुआ अचारी मसाला
Fried Chillies, cut into half, तले हुए हरी मिर्च
1 tbsp Mango pickle, आम का अचार
For Garnish
Prepared Achari Masala, तैयार किया हुआ अचारी मसाला
Coriander sprig, धनिया पत्ता
Process
For Marination
- In a bowl, add chicken, salt to taste, pickle oil and curd.
- Marinate everything well and keep aside for 5 minutes.
For Ginger Garlic Paste
- In a mortar pestle, add green chilli, ginger, garlic cloves, salt to taste and make a smooth paste of it.
For Achari Masala
- In a pan, add fennel seeds, cumin seeds, fenugreek seeds, mustard seeds, nigella seeds.
- Add dry kashmiri red chilli, and dry roast on low flame until the spices turn aromatic.
- Transfer it into a bowl, add dry mango powder and sugar.
- Transfer it into a grinder jar and grind it coarsely. Keep it aside for further use.
For Fried Achari Mirch
- In a pan, add mustard oil on moderate heat.
- Take large green chillies, slit into the middle and stuffed achari masala.
- Place the prepared chillies into the hot oil and fry till light golden brown in color.
- Remove from the flame and keep it aside for further use.
For Tempering
- In the same kadhai, add mustard oil, once the oil gets hot, add onions, ginger garlic green paste and cook on low flame.
- Once the onions turn light brown in color, add marinated chicken into it.
- And saute them well. Once chicken gets well roasted, add coriander powder and saute them well.
- Once coriander powder is roasted well, add tomato puree, achari masala, degi red chilli powder, pickled oil, and mustard oil and mix everything well.
- Add water, achari masala, prepared fried stuffed chillies, little water and mix well.
- Cover it with a lid and cook on medium flame.
- Add mango pickle and once again cover it with a lid and let it cook for a while.
- Garnish with some achari masala and coriander sprig.
- Serve hot with paratha.
