Bohri style Chicken Curry आसान काजू चिकन करी easy Kaju Chicken recipe

Ingredients

For Gravy

2-3 tbsp Ghee, घी

2 no. Bay leaf, तेज पत्ता

4-5 no. Green cardamom, हरी इलायची

3 medium size Onions, roughly sliced, प्याज

Salt to taste, नमक स्वादअनुसार

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

15-20 no. Cashew Nuts, काजू

2 cups Water, पानी

½ inch Cinnamon stick, दालचीनी

few Tender Coriander stems with roots, roughly chopped, धनिये के डंठल

 

For Chicken Marination

1 kg Chicken legs, चिकन

1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

2 tbsp Oil, तेल

1 no. Green chilli (less spicy & roughly torn) हरी मिर्च

 

For Cooking Chicken

½ tbsp Ghee, घी

Marinated chicken, मैरीनेट किया हुआ चिकन

½ cup Water, पानी

 

For Finishing Gravy

2 tbsp Ghee, घी

1 no. Green chilli, less spicy, हरी मिर्च

1 ½ cups Curd, beaten, दही

Prepared gravy, तैयार की हुई ग्रेवी

½ cup Water, पानी

Salt to taste, नमक स्वादअनुसार

1 no. Green chilli (less spicy & slit into middle) हरी मिर्च

Cooked chicken, पका हुआ चिकन

A pinch of Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

 

For Frying Nuts

1 tbsp Ghee, घी

10-12 no. Cashew nuts, cut into halves, काजू

½ tsp dry Fenugreek leaves, crushed, कसूरी मेथी

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

 

For Garnish

Black peppercorns, crushed, कुटी हुई काली मिर्च

Fried cashew nuts, तले हुए काजू

Fresh cream, ताज़ा मलाई

Chilli oil, मिर्च का तेल

Green chilli, slit into half, हरी मिर्च

Coriander sprig, धनिया पत्ता

Process

For Cooking Gravy

  • In a handi, add ghee, bay leaf, green cardamom, onions, salt to taste and saute it for 4-5 minutes.
  • Add ginger garlic paste, cashew nuts and mix it well.
  • Add water, cinnamon stick, tender coriander stems and cook it for a while.
  • Transfer it to a mixer grinder jar and grind it into a smooth paste.
  • Keep it aside for further use.

For Chicken Marination

  • In a bowl, add chicken, ginger garlic paste, salt to taste, oil, green chilli and give it a good mix.
  • Keep it aside to marinate for a while.

For Cooking Chicken

  • In a pan, add ghee, once it’s hot, add marinated chicken and sear it for 4-5 minutes on each side.
  • Add water and allow it to cook for a while.
  • Transfer the chicken to a tray and keep it aside for further use.

For Finishing Gravy

  • In a handi, add ghee, once it’s hot, add green chilli, curd and let it cook for 5-6 minutes until curd is cooked well.
  • Add prepared gravy and give it a quick boil.
  • Add water, salt to taste, green chilli, seared chicken and cook it for a while until cooked well.
  • Finish it with a pinch of sugar, salt to taste and mix it well.
  • Transfer it to a serving dish, garnish it with black peppercorns crushed, fried cashew nuts, fresh cream, chilli oil, green chilli and coriander sprig.
  • Serve hot with paratha or roti.

For Frying Nuts

  • In a pan, add ghee, once it’s hot, add cashew nuts and fry them until golden in colour.
  • Add dry fenugreek leaves, degi red chili powder, salt to taste and toss it well.
  • Keep it aside for further use.
