Ingredients

For Dry Mixture

1 cup Refined flour

½ cup Almond flour (optional)

½ tsp dry Ginger powder

½ tsp Cinnamon powder

¼ tsp Clove powder

½ tsp Baking soda

¼ tsp Nutmeg powder

¼ cup Cocoa powder

210 gm Nestlé MILKMAID mini

Prepared wet mixture

1 tbsp Oil

2-3 tbsp Caramel colour (optional)

1 tbsp Oil

50 ml Orange juice

 

For Wet Mixture

4 tbsp Tutti frutti

1 tbsp Raisins

3-4 no. Apricot, chopped

150 ml Orange juice

100 gm Butter, cubed,

 

For Sauce

2 tbsp Butter, cubed

2 tsp Sugar

100 gm Nestlé MILKMAID mini

Little water

 

For Caramelized Orange

1 tbsp Sugar

½ large Orange, cut into wedges

 

For Syrup

1 cup Water

2 tbsp Orange marmalade

A pinch of salt

 

Other Ingredients

1 tbsp Butter (for greasing)

1 tbsp Refined flour (for greasing)

 

For Garnish

Prepared sauce

Candid cherrys

Caramelized orange

Icing sugar

fresh Mint sprig

Process

Process

For Dry Mixture

  • In a bowl, add refined flour, almond flour, dry ginger powder, cinnamon powder, clove powder, baking soda, nutmeg powder, cocoa powder and give it a good mix.
  • Add Nestlé MILKMAID mini, prepared wet mixture, oil, caramel colour, oil, orange juice and mix it well.
  • Pour the mixture in a greased mold, place it in the steamer and steam it for 15-20 minutes until cooked well.
  • Gently demold the pudding and leave it aside for further use.

 

For Wet Mixture

  • In a pan or saucepan, add tutti frutti, raisins, apricot, orange juice, a pinch of salt, butter and give it a quick boil.
  • Keep it aside to cool down at room temperature.

 

For Sauce

  • In a pan, add butter, sugar and let it cook for a while until sugar is caramelized.
  • Add Nestlé MILKMAID mini, water and give it a good mix.
  • Keep it aside for further use.

 

For Caramelized Orange

  • In a pan, add sugar, orange, cook it until sugar is caramelized and well coated.
  • Transfer the oranges into the dish or tray and keep it aside for further use.

 

For Syrup

  • In a pan, add water, orange marmalade, a pinch of salt and give it a quick boil.
  • Take the prepared puddings and prick with the help of a satay stick or toothpick.
  • Pour the prepared syrup onto the pudding and leave it aside for further use.

For Christmas pudding

  • In a serving plate add prepared sauce and place the prepared pudding.
  • Garnish it with candied cherries, caramelized orange, icing sugar and fresh mint sprig.
  • Serve warm.
