Ingredients

For Kofta Mixture

800 gms Paneer, पनीर

1 cup Sweet Corn kernels, मकई के दाने

Sauteed Fenugreek leaves, मेथी के पत्ते

Salt to taste, नमक स्वादअनुसार

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

3 no. Bread slices (trim edges & roughly diced) ब्रेड

¼ cup Cornstarch, कॉर्नस्टार्च

⅓ cup Semolina, सूजी

 

For Sauteing Fenugreek leaves

2 tbsp Butter, cubed, मक्खन

1 cup fresh Fenugreek leaves, मेथी के पत्ते

 

For Gravy

2-3 tbsp Ghee, घी

2 tbsp Oil, तेल

2-3 no. Cloves, लौंग

7-8 no. Black peppercorns, काली मिर्च के दाने

5-6 no. Green cardamom, हरी इलायची

1 large Onion, roughly diced, प्याज

4 large Tomatoes, roughly diced, टमाटर

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

1 tsp Turmeric powder, हल्दी पाउडर

1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

12-15 no. Cashew Nuts, काजू

2-3 cups Water, पानी

 

For Finishing Curry

2-3 tbsp Butter, cubed, मक्खन

1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी

Prepared gravy, तैयार की हुई ग्रेवी

1 cup Water, पानी

¼ cup Fresh cream, ताज़ा मलाई

 

Other Ingredients

Oil for frying, तलने के लिए तेल

 

For Garnish

Fresh cream, ताज़ा मलाई

Coriander sprig, धनिया पत्ता

Chili oil, मिर्च का तेल

 

Process

For Kofta Mixture

  • In a bowl, add paneer, sweet corn kernels, sauteed fenugreek leaves, salt to taste, ginger garlic paste, bread slices and mix it well.
  • Transfer it into the mixer grinder jar and grind it into the smooth fine paste.
  • In a bowl, add prepared mixture, cornstarch, semolina and give it a good mix.
  • In a kadai, heat oil, drop the kofta and fry it until golden brown in color on medium flame.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Sauteing Fenugreek Leaves

  • In a pan, add butter, once it melts, add fresh fenugreek leaves and saute it for 2-3 minutes.
  • Keep it aside for further use.

 

For Gravy

  • In a handi, add ghee & oil, once it’s hot, cloves, black peppercorns, green cardamom, onion and saute it for a while until it’s translucent.
  • Add tomatoes, ginger garlic paste, salt to taste and cook it for 4-5 minutes on medium flames.
  • Add turmeric powder, degi red chili powder, cashew nuts and saute it for a minute.
  • Add water, mix it well and allow to cook for 10-12 minutes until cooked well.
  • Transfer it to a mixer grinder jar and grind it into smooth paste.
  • Keep it aside for further use.

 

For Finishing Gravy

  • In a handi, add butter, once it melts, add dry fenugreek leaves, prepared gravy and let it boil for 5-6 minutes.
  • Add water to adjust the consistency and simmer it for a while.
  • Finish it with fresh cream and give it a quick boil.
  • Transfer it to a serving dish and place fried koftas.
  • Garnish it with fresh cream, coriander sprig and chili oil.
  • Serve hot with roti.
