Ingredients

For Chatpate Bhindi Aloo

3-4 heaped tbsp Mustard oil, सरसों का तेल

1 no. large Onion, roughly sliced, प्याज

2 no. medium Potatoes (peeled & roughly sliced) आलू

Prepared Ginger Green chili paste, अदरक हरी मिर्च पेस्ट

1 kg Ladyfinger (trim the head, tale & chopped) भिंडी

Salt to taste, नमक स्वादअनुसार

½ tsp Coriander powder, धनिया पाउडर

1 tsp dry Mango powder, आमचूर पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

 

For Ginger Green Chili Paste

½ inch Ginger (peeled & roughly chopped) अदरक

1 no. Green chili, roughly chopped, हरी मिर्च

 

For Frying Bhindi

3-4 tbsp Mustard oil, सरसों का तेल

1 no. dry Red chili, roughly torn, सूखी लाल मिर्च

200 gms Ladyfinger (trim the head, tale & chopped) भिंडी

Salt to taste, नमक स्वादअनुसार

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

 

For Raita

1 ½ cup Curd, beaten, दही

Fried Bhindi, तली हुई भिंडी

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Chatpate Bhindi Aloo

  • In an iron kadai, add mustard oil, once it’s smoky hot, add onion, potatoes and fry them for a while until golden in color.
  • Add prepared ginger green chili paste and saute it for a minute.
  • Add ladyfinger, salt to taste, coriander powder, dry mango powder, turmeric powder, degi red chili powder and mix it well.
  • Let it cook for 10-12 minutes on medium flames until cooked well.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with roti and prepared raita.

For Ginger Green Chili Paste

  • In a mortar pestle, add ginger, green chili and grind into a coarse paste.
  • Keep it aside for further use.

For Frying Bhindi

  • In a non-stick pan, add mustard oil, once it’s hot, add dry red chili, lady finger and saute it until golden brown.
  • Add salt to taste, degi red chili powder and toss it for a minute.
  • Keep it aside for further use.

For Raita

  • In a serving bowl, add curd, top it up with fried bhindi and garnish it with coriander sprig.
  • Serve with prepared chatpati bhindi aloo ki sabji and roti.
