Ingredients

For Ginger Green chilli paste

½ inch Ginger, peeled, अदरक

2 tbsp fresh Coriander leaves, धनिया पत्ता

2 no. Green chillies, roughly torn, हरी मिर्च

For Curd Mixture

Prepared Ginger Green chilli paste, अदरक हरी मिर्च का पेस्ट

2 cups Curd, beaten, दही

2 cups Water, पानी

½ tsp Turmeric powder, हल्दी पाउडर

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

a pinch of Asafoetida, हींग

1 tbsp Gram flour, बेसन

Salt to taste, नमक स्वादअनुसार

1 tsp jaggery, गुड़

 

For Pakoda

2 large Onions (peeled & grated) प्याज

2-4 no. Green chillies, chopped, हरी मिर्च

2-3 tbsp fresh Coriander leaves, chopped, धनिया पत्ता

½ inch Ginger (peeled & grated) अदरक

a pinch of Carom seeds, अजवाइन

2 tbsp Prepared masala, तैयार किया हुआ मसाला

½ tsp Turmeric powder, हल्दी पाउडर

¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

4-5 heaped tbsp Gram flour, बेसन

Salt to taste, नमक स्वादअनुसार

 

For Kadhi Pakoda

2-3 tbsp Mustard oil, सरसों का तेल

5-6 no. Fenugreek seeds, मेथी दाना

4 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च

Prepared curd mixture, तैयार किया हुआ दही का मिश्रण

1 cup Water, पानी

Salt to taste, नमक स्वादअनुसार

1 ½ tsp Prepared masala, तैयार किया हुआ मसाला

Fried pakoras, तले हुए पकौड़े

 

For Masala

2-3 heaped tbsp Coriander seeds, धनिये के बीज

1 tsp Cumin seeds, जीरा

½ tsp Fennel seeds, सौंफ़

2-4 no. Black peppercorns, काली मिर्च के दाने

Salt to taste, नमक स्वादअनुसार

 

Other Ingredients

Oil for frying, तलने के लिए तेल

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Ginger Green Chilli Paste

  • In a mortar pestle, add ginger, fresh coriander leaves, green chillies and grind it into coarse paste.
  • Keep it aside for further use.

 

For Curd Mixture

  • In a bowl, add prepared ginger green chili paste, curd, water and mix it well.
  • Add turmeric powder, degi red chili powder, a pinch of asafoetida, gram flour, salt to taste, jaggery and give it a good mix.
  • Keep it aside for further use.

 

For Pakoda

  • In a bowl, add grated onions, green chillies, fresh coriander leaves, ginger, a pinch of carom seeds, prepared masala, turmeric powder, degi red chili powder, gram flour, salt to taste and mix it well.
  • In a kadai, add oil, once it’s hot, drop prepared mixture balls, fry them until crispy and golden in colour.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Kadhi Pakoda

  • In a handi, add mustard oil, once it’s smoky hot, add fenugreek seeds, dry kashmiri red chillies and cook it for a minute.
  • Add prepared curd mixture, water and simmer it for at least 15-20 minutes.
  • Finish it with salt to taste, prepare masala, fried pakoras and give it a quick boil.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with steam rice.

 

For Masala

  • In a pan, add coriander seeds, cumin seeds, fennel seeds, black peppercorns, salt to taste and roast them for 2-3 minutes until aromatic.
  • Transfer it to parchment paper and crush it coarsely with the help of a rolling pin.
  • Keep it aside for further use.
