Time to revisit Old time Lucknow and recreate this all time favourite dish, Chicken Stew or as it is popularly known as 'Ishtew'.

Ingredients

For Chicken Marination

1 kg Chicken (drumsticks & thighs) चिकन

Salt to taste, नमक स्वादअनुसार

2 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 no. Green chilli (roughly chopped) हरी मिर्च

1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

1 tbsp Oil, तेल

 

For Chicken Stew

3-4 tbsp Oil, तेल

2 no. dry Red chillies, सूखी लाल मिर्च

5-6 no. Black peppercorns, काली मिर्च के दाने

1 no. Black cardamom, बड़ी इलायची

3 large Onions, roughly sliced, प्याज

Salt to taste, नमक स्वादअनुसार

Little water, पानी

Marinated chicken, मैरीनेटेड चिकन

½ tsp Coriander seeds, धनिये के बीज

¼ tsp Cumin seeds, जीरा

1 no. Clove, लौंग

4-5 no. Black peppercorns, काली मिर्च के दाने

¼ tsp Coriander powder, धनिया पाउडर

1 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें

1 ½ cups Curd, beaten, दही

¼ cup Fresh cream, ताज़ा मलाई

2 tsp Ghee, घी

¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Chicken Marination

  • In a bowl, add chicken, salt to taste, ginger garlic paste, green chilli, crushed black peppercorns, oil and mix it well.
  • Keep it aside to marinate it for a while.

For Chicken Stew

  • In a handi, add oil, once it’s hot, add dry red chillies, black peppercorns, black cardamom, onions, salt to taste and saute it for a while until translucent.
  • Add little water, marinated chicken and cook for 5-6 minutes until tender.
  • Add coriander seeds, cumin seeds, clove, black peppercorns, coriander powder, tender coriander stems with roots and give it a good mix.
  • Add curd, fresh cream, cover it with a lid and let it cook for 10-12 minutes on medium flames until cooked well.
  • Finish it with some ghee, crushed black peppercorns and simmer it for a minute.
  • Transfer it to a serving dish and garnish it with coriander sprig.
  • Serve hot with khameeri roti or ladi pav.
