Ingredients

For Paste

6-7 no. Green chillies (less spicy & roughly chopped) हरी मिर्च

3-4 no. Garlic cloves, लहसुन

2 tbsp Black peppercorns, काली मिर्च के दाने

1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

Salt to taste, नमक स्वादअनुसार

1 tbsp Oil, तेल

 

For Marination

800 gms Paneer, cut into diced, पनीर

1 tbsp Prepared paste, तैयार की हुई पेस्ट

 

For Frying

2-3 tbsp Oil, तेल

Marinated paneer, मैरीनेटेड पनीर

 

For Curd Mixture

1 cup Curd, beaten, दही

1 heaped tbsp Prepared paste, तैयार की हुई पेस्ट

 

For 3 Mirch Ka Paneer

Remaining oil, बचा हुआ तेल

1 tbsp Oil, तेल

2 large Onions, roughly sliced, प्याज

Salt to taste, नमक स्वादअनुसार

Little water, पानी

Prepared curd mixture, तैयार किया हुआ दही का मिश्रण

1 tbsp Coriander powder (optional) धनिया पाउडर

1 cup Water, पानी

Fried paneer, तला हुआ पनीर

Prepared tadka, तैयार किया हुआ तड़का

 

For Tadka

2 tbsp Oil, तेल

2-3 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च

½ tsp Cumin seeds, जीरा

4 no.Green chillies (less spicy & roughly chopped) हरी मिर्च

2-3 no. Fresh red chillies, roughly chopped, ताजी लाल मिर्च

A pinch of sugar, चीनी

Salt to taste, नमक स्वादअनुसार

 

For Garnish

Coriander sprig, धनिया पत्ता

Fresh cream, ताज़ा मलाई

Process

For Paste

  • In a bowl, add green chillies, garlic, black peppercorns, degi red chili powder, salt to taste and oil.
  • Transfer it to a mixer grinder jar and grind it into smooth paste.
  • Keep it aside for further use.

 

For Marination

  • In a bowl, add paneer, prepared paste and mix it well.
  • Keep it aside to marinate for a while..

 

For Frying

  • In a pan, add oil, once it’s hot, place marinated paneer and fry them until golden in colour.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Curd Mixture

  • In a bowl, add curd, prepared paste and give it a good mix.
  • Keep it aside for further use.

 

For 3 Mirch ka Paneer

  • In a handi, add remaining oil, oil, once it’s hot, add onions and saute it until translucent.
  • Add little water, prepared curd mixture, coriander powder and cook it for 5-6 minutes.
  • Add water to adjust the consistency and give it a quick boil.
  • Add fried paneer and let it simmer for another 5-6 minutes on medium flames.
  • Finish it with prepared tadka and give it a good mix.
  • Transfer it to a serving dish, garnish it with coriander sprig and fresh cream.

 

For Tadka

  • In a pan, add oil, once it’s hot, dry red chillies, cumin seeds, green chillies and toss it on high flames.
  • Add fresh red chillies, a pinch of sugar, salt to taste and toss it for a minute.
  • Keep it aside for further use.
