Ingredients
For Chicken Marination
900 gms Chicken (thigh & drumstick) चिकन
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ tbsp Mustard oil, सरसों का तेल
For Punjabi Garam Masala
¼ cup Coriander seeds, धनिये के बीज
1 tbsp Cumin seeds, जीरा
3 no. Black cardamom, बड़ी इलायची
3 no. Green cardamom, हरी इलायची
¼ tsp Fenugreek seeds, मेथी दाना
2 tbsp dry Fenugreek leaves, कसूरी मेथी
1 tbsp Black peppercorns, काली मिर्च के दाने
2-3 no. Cloves, लौंग
Salt to taste, नमक स्वादअनुसार
For Punjabi Chicken curry
¼ cup Mustard oil, सरसों का तेल
2 tbsp Ghee, घी
2 no. Bay leaf, तेज पत्ता
1 tsp Cumin seeds, जीरा
3 large Onions chopped, प्याज
2 no. Green Chillies (less spicy & roughly chopped) हरी मिर्च
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
Marinated Chicken, मैरीनेटेड चिकन
1 ½ cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
2 cups Water, पानी
4 tbsp Prepared Punjabi Garam Masala, तैयार किया हुआ पंजाबी गरम मसाला
2-3 tbsp fresh Coriander leaves, roughly chopped, धनिया पत्ता

Process
For Chicken Marination
- In a large bowl, add chicken, salt to taste, turmeric powder, degi red chili powder, ginger Garlic paste, mustard oil and give it a good mix.
- Keep it aside to marinate for a while.
For Punjabi Garam Masala
- Heat a pan, add coriander seeds, cumin seeds, black cardamom, green cardamom, fenugreek seeds, dry fenugreek leaves, black peppercorns, cloves, salt to taste and dry roast it for a minute until aromatic.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- keep it aside for further use.
For Punjabi Chicken curry
- In a handi or kadhai, add mustard oil, ghee, once it’s hot, add bay leaves, cumin seeds and let it splutter.
- Add onions, green chillies and saute it until translucent.
- Add ginger garlic paste, salt, coriander stems and cook it for 2-3 minutes until golden brown.
- Add marinated chicken and cook it for a while until half cooked.
- Add tomato puree and cook it well for a while.
- Add water, prepared punjabi garam masala and simmer it well.
- Finish it with coriander leaves and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or rice.
