Ingredients
For Paste
2-3 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
2 tsp Cumin seeds, जीरा
½ tbsp Coriander seeds, धनिये के बीज
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
4 no. Black cardamom, बड़ी इलायची
2-4 no. Cloves, लौंग
¼ inch Cinnamon stick, दालचीनी
3 medium Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
3-4 no. Garlic cloves, roughly chopped, लहसुन
½ inch Ginger (peeled & roughly sliced) अदरक
⅓ cup fresh Coriander leaves, roughly chopped, धनिया पत्ता
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
For Ros
1 ½ tbsp Oil, तेल
1 ¼ cups Prepared paste, तैयार किया हुआ पेस्ट
1 ½ cups Water, पानी
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
For Omelette
2 tsp Oil, तेल
4 no. whole Eggs, अंडे
3 no. Green chillies (less spicy & finely chopped) हरी मिर्च
1 tsp Tender coriander stems, finely chopped, धनिये के डंठल
Salt to taste, नमक स्वादअनुसार
For Salad
1 large Onion, roughly chopped, प्याज
2 medium Tomatoes, roughly chopped, टमाटर
1 Green chili (less spicy & finely chopped) हरी मिर्च
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
1 tbsp fresh Coriander leaves, roughly torn, धनिया पत्ता
½ tsp Oil, तेल
Salt to taste, नमक स्वादअनुसार
1-2 tsp Lemon juice, नींबू का रस
Other Ingredients
2 no. Ladi pav, लादी पाव
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Paste
- In a kadai, add oil, once it’s hot, add bay leaf, cumin seeds and let it splutter.
- Add coriander seeds, black peppercorns, black cardamom, cloves, cinnamon stick and saute it for a minute until aromatic.
- Add onions, salt to taste and cook for a while until translucent.
- Add garlic, ginger, fresh coriander leaves, degi red chili powder, turmeric powder and saute it well.
- Transfer it to a bowl and let it cool down at room temperature.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Ros
- In the same kadai, add oil, once it’s hot, add prepared paste and cook it for a while until it leaves the sides of the pan.
- Add water to adjust the consistency, salt to taste, sugar and let it simmer for 7-8 minutes on low flames.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with prepared omelet, salad and ladi pav.
For Omelette
- In a bowl, crack the whole eggs, add green chillies, tender coriander stems, salt to taste and give it a good mix.
- In a pan, add oil, once it’s hot, pour the egg mixture and cook it for 2-3 minutes on both the sides on medium flames.
- Transfer it to a serving dish, garnish it with coriander sprig and lemon wedge.
- Serve hot with prepared ross, salad and ladi pav.
For Salad
- In a bowl, add onion, tomatoes, green chili, tender coriander stems, fresh coriander leaves, oil, salt to taste, lemon juice and give it a good mix.
- Keep it aside for further use.
