10 Mins में Kripsy Juicy Chicken शादियों वाला चटकारा चिकन Chicken Chatkara
When we talk about weddings and the शादी wala khaana, one dish that definite comes to mind is Chicken Chatkara. Kripsy from outside and juicy from within, this Chicken starter has taken the net by storm. This video shows my special recipe for Chatkare wala Chicken leg.
Ingredients
For Chicken Marination
1 kg Chicken drumsticks (slit), चिकन
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
1 tbsp Chilli flakes, चिली फ्लेक्स
1 tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
Salt to taste, नमक स्वादअनुसार
1 tbsp Lemon juice, नींबू का रस
1 tbsp Oil, तेल
For Chatkara Gravy
1 tbsp Oil, तेल
1 tbsp Chilli flakes, चिली फ्लेक्स
1 tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
1 heaped tbsp Dark soy sauce, सोया सॉस
⅓ cup Tomato ketchup, टमाटर केचप
½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Vinegar, सिरका
1 tbsp Honey, शहद
Marinated chicken, मैरीनेटेड चिकन
1 cup Water, पानी
1 tsp Oregano, ओरेगैनो
For Dry Masala
2 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tbsp Black pepper powder, काली मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
2 tsp dry Mango powder, अमचूर पाउडर
A pinch of Asafoetida, हींग
1 tsp Cumin powder, जीरा पाउडर
Salt to taste, नमक स्वादअनुसार
For Egg Mixture
4-5 no. Eggs, अंडे
Salt to taste, नमक स्वादअनुसार
For Dry Coating
2 cups Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
1 tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
For Coating Chicken
Cooked chicken, पका हुआ चिकन
Prepared dry coating, तैयार किया हुआ सूखा मिश्रण
Prepared egg mixture, तैयार किया हुआ अंडे का मिश्रण
2-3 cups Cornflakes (crushed), कॉर्नफ्लेक्स
For Finishing Gravy
1 tbsp Oil, तेल
1 no. Green chilli (less spicy & cut diagonally), हरी मिर्च
Prepared chatkara gravy, तैयार की हुई चटकारा ग्रेवी
½ cup Water, पानी
Fried chicken, फ्रायड चिकन
For Chicken Chatkara
Fried chicken, फ्रायड चिकन
Prepared dry masala, तैयार किया हुआ मसाला
Other Ingredients
Oil for frying, तलने के लिए तेल
For Garnish
Lemon wedges, नींबू की फांक
Prepared masala, तैयार किया हुआ मसाला
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a bowl, add chicken drumsticks, ginger garlic paste, fresh coriander leaves, chilli flakes, crushed black peppercorns, lemon juice, oil and marinate well.
- Keep it aside for a while.
For Chatkara Gravy
- In a pan, add oil, once it’s hot, add chilli flakes, crushed black peppercorns, dark soy sauce, tomato ketchup and cook for a minute.
- Add ginger garlic paste, vinegar, honey and give it a quick boil.
- Add marinated chicken, cover it with a lid and let it cook for 7-8 minutes or until it’s half cooked.
- Transfer the chicken into the tray, in the same pan, add water, oregano, and give it a quick boil.
- Keep it aside for further use.
For Dry Masala
- In a bowl, add degi red chilli powder, black pepper powder, coriander powder, dry mango powder, a pinch of asafoetida, cumin powder, salt to taste and give it a good mix.
- Keep it aside for further use.
For Egg Mixture
- In a bowl, add eggs, salt to taste and whisk it well.
- Keep it aside for further use.
For Dry Coating
- In a bowl, add refined flour, salt to taste, crushed black peppercorns and give it a good mix.
- Keep it aside for further use.
For Coating Chicken
- Take cooked chicken, coat it with prepared dry coating, drop it into the egg mixture and coat well.
- Place the chicken into cornflakes and coat well on all the sides.
- Place the chicken into the hot oil and fry them until light brown in colour and crispy texture.
- Transfer the chicken into the absorbent sheet and keep it aside for further use.
For Finishing Gravy
- In a pan, add oil, once it’s hot, add green chilli, prepared chatkara gravy, water and boil for 2-3 minutes.
- Add fried chicken and cook for a while until chicken coats the gravy well.
- Transfer it into the serving dish and garnish it with lemon wedge and coriander sprig.
- Serve hot.
For Chatkara Chicken
- In a bowl, add fried chicken sprinkle prepared dry masala.
- Transfer it into the serving dish and garnish it with lemon wedge, prepared dry masala and coriander sprig.
- Serve hot with prepared chatkara gravy.
