Ingredients

For Vegetable Mixture

3-4 no. Green Chillies (less spicy & finely chopped), हरी मिर्च

1 inch Ginger (peeled & finely chopped), अदरक

½ cup fresh Coriander leaves (finely chopped), धनिया पत्ता

 

For Salad

2 medium Onions (sliced), प्याज

⅓ cup Spring Onion bulbs (roughly chopped), हरी प्याज

1 no. Garlic clove (grated), लहसुन

½ inch Ginger (peeled & grated), अदरक

2 tsp Vinegar, सिरका

½ tsp Chilli flakes, चिली फ्लेक्स

2 tsp Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

½ tbsp Oil, तेल

1 tbsp Spring Onion (finely chopped), हरी प्याज

1 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता

 

For Dough

2 cups Refined flour, मैदा

1 tsp Vinegar, सिरका

Salt to taste, नमक स्वादअनुसार

Water as required, पानी

 

For Paneer Corn Filling

500 gms Paneer, पनीर

1 cup Sweet Corn (paste), मक्के का पेस्ट

1 tbsp Chilli flakes, चिली फ्लेक्स

½ quantity of Vegetables Mixture, तैयार किया हुआ सब्जियों का मिश्रण

1 tsp Red Chilli sauce, रेड चिली सॉस

½ tsp Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

 

For Chicken Filling

500 gms Chicken mince, चिकन का कीमा

½ quantity of Vegetables Mixture, तैयार किया हुआ सब्जियों का मिश्रण

½ tbsp Black Pepper powder, काली मिर्च का पाउडर

Salt to taste, नमक स्वादअनुसार

 

For Chilli Oil

3-4 no. Dry Kashmiri Red Chillies (chopped), सूखी कश्मीरी लाल मिर्च

1 tbsp Chilli flakes, चिली फ्लेक्स

1 tbsp Spring Onion (finely chopped), हरी प्याज

1 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता

¾ cup Oil, तेल

2 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

1-2 tbsp Vinegar, सिरका

1 no. Garlic clove (chopped), लहसुन

1 tbsp Dark Soy sauce, डार्क सोया सॉस

 

For Cooking Momo

Prepared rolled sheets, तैयार की हुई शीट्स

Chicken filling, तैयार की हुई चिकन फिलिंग

Prepared rolled sheets, तैयार की हुई शीट्स

Paneer Corn filling, तैयार की हुई पनीर और कॉर्न की फिलिंग

1-2 tsp Oil, तेल

Little Water, पानी

 

For Garnish

Prepared Chilli Oil, तैयार किया हुआ चिली ऑयल

Fresh Coriander leaves (chopped), धनिया पत्ता

Roasted Peanuts (crushed), भुनी हुई मूंगफली

Prepared Salad, तैयार किया हुआ सलाद

Sweetcorn Kernels (boiled), उबले हुए स्वीटकॉर्न के दाने

Soy sauce, सोया सॉस

White Sesame seeds, सफेद तिल

Coriander sprig, धनिया पत्ता

Process

For Vegetable Mixture

  • In a bowl, add chopped green chillies, ginger, fresh coriander leaves and give it a good mix.
  • Keep it aside for further use.

 

For Salad

  • In a bowl, add onions, spring onion bulbs, grated garlic, ginger, vinegar, chilli flakes, sugar, salt to taste, oil, spring onion, fresh coriander leaves and mix everything well.
  • Keep it aside for further use.

 

For Dough

  • In a bowl, add refined flour, vinegar, salt to taste, water as required and knead it into the semi-soft dough.
  • Cover it with the damp cloth and leave it aside for a while.

 

For Paneer Corn Filling

  • In a bowl, add paneer, sweet corn paste, chilli flakes, prepared vegetable mixture, red chilli sauce, sugar, salt to taste and give it a good mix.
  • Keep it aside for further use.

 

For Chicken Filling

  • In a bowl, add chicken mince, prepared vegetable mixture, black pepper powder, salt to taste and give it a good mix.
  • Keep it aside for further use.

 

For Chilli Oil

  • In a bowl, add chopped dry kashmiri red chillies, chilli flakes, spring onion, fresh coriander leaves and mix well.
  • In a pan, add oil, once it’s moderately hot, add prepared mixture and cook for 3-4 minutes on low flames.
  • Add degi red chilli powder, vinegar, chopped garlic, dark soy sauce and cook for another 2-3 minutes or until it’s cooked.

 

For Cooking Momo

  • In a pan, add prepared rolled sheets, add a spoonful of prepared chicken filling, cover it with prepared rolled sheets.
  • Add splash of water, cover it with the lid and let it cook for 12-15 minutes on medium flames or until it’s cooked.
  • Transfer it into the serving bowl, garnish it with prepared chilli oil, fresh coriander leaves, crushed roasted peanuts, prepared salad and coriander sprig.
  • Serve hot.
  • In a pan, add prepared rolled sheets, add a spoonful of prepared paneer corn filling, cover it with prepared rolled sheets.
  • Add splash of water, cover it with the lid and let it cook for 12-15 minutes on medium flames or until it’s cooked.
  • Transfer it into the serving bowl, garnish it with prepared chilli oil, fresh coriander leaves and crushed roasted peanuts, prepared salad, boiled sweetcorn kernels, white sesame seeds, soy sauce and coriander sprig.
  • Serve hot.
