Sooji Snacks बिना तेल के मज़ेदार सूजी नाश्ता Sooji Fare सूजी फारे की तरी सब्जी
This has been on my list for long now. Chattisgarh style famous Sooji Fare are interesting snacks. Especially for those looking for low oil or oil free snacks. Do try these Sooji Nashta recipes.
Ingredients
For Stuffing
2 cups Chana dal (soaked overnight), भीगी हुई चना दाल
5-6 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
2 inch Ginger (peeled & roughly chopped), अदरक
¼ cup Coriander leaves (roughly chopped), धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
½ tsp Cumin seeds, जीरा
1 tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
For Dough
2 ½ cups Water, पानी
Salt to taste, नमक स्वादअनुसार
½ tbsp Oil, तेल
2 cups Semolina powder, सूजी पाउडर
For Roasting Vegetables
½ large Onion (cut into half), प्याज
2 large Tomatoes (cut into half), टमाटर
2-4 no. Green chillies (less spicy), हरी मिर्च
For Chutney
Roasted vegetables, भुनी हुई सब्जियाँ
1 inch Ginger (peeled & roughly chopped), अदरक
Salt to taste, नमक स्वादअनुसार
For Tari Wala Fara
2 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
A pinch of asafoetida, हींग
4-5 no. dry Kashmiri red chillies (roughly torn), सूखी कश्मीरी लाल मिर्च
7-8 Large Tomatoes (puree), टमाटर की प्यूरी
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tbsp Coriander powder, धनिया पाउडर
¼ tsp Garam masala, गरम मसाला
¼ tsp Cumin powder, जीरा पाउडर
Little water, पानी
½ cup Water, पानी
2 tbsp Butter (cubed), मक्खन
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
½ tsp Sugar, चीनी
Fried fara, तले हुए फरा
1 tbsp Butter (cubed), मक्खन
For Tadka
1-2 tbsp Oil, तेल
¼ tsp Cumin seeds, जीरा
¼ tsp small Mustard seeds, छोटी राई
¼ tsp Fennel seeds, सौंफ
3-4 no. dry Kashmiri red chillies (roughly chopped), सूखी कश्मीरी लाल मिर्च
2 no. Green chillies (less spicy & chopped), हरी मिर्च
2-3 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता
1-2 spring Curry leaves, कड़ी पत्ता
Fried fara, तले हुए फरा
Salt to taste, नमक स्वाद अनुसार
1 tsp Lemon juice, नींबू का रस
Other Ingredients
Oil for greasing, तेल
Oil for shallow frying, तलने के लिए तेल
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedges, नींबू की फांक
Process
For Stuffing
- In a bowl, add soaked chana dal, green chillies, ginger, coriander leaves, salt to taste, cumin seeds, crushed black peppercorns and give it a good mix.
- Transfer the mixture into a mixer grinder jar and grind it into a coarse paste.
- Keep it aside for further use.
For Dough
- In a pan, add water, salt to taste, oil and give it a quick boil.
- Add semolina powder and cook it on medium flames and cook until doughy consistency until cooked well.
- Transfer the dough and keep it aside for a while.
- Divide the dough in medium lemon size balls, make it a thin roti and cut it into the desired shape with the help of a round cutter.
- Take one sheet of fara dough, fill it up with prepared stuffing and make it a bao shaped buns.
- Place it in a greased streamer tray and cook it for 10-12 minutes until it’s cooked well.
- Transfer it to a tray and keep it aside for further use.
For Roasting Vegetables
- Place the cooking rack onto the gas range, place onion, tomato, green chillies, roast them for 4-5 minutes until charred and cooked.
- Transfer it to a kitchen platform or tray and deskin the vegetables.
- Keep it aside for further use.
For Chutney
- In a bowl, add roasted vegetables, ginger, salt to taste and mix it well.
- Transfer it to a mortar pestle or mixer grinder jar and grind it into coarse paste.
- Transfer it to a serving dish, serve hot with prepared fara.
For Frying
- In a pan, add oil, once it’s hot, place cooked fara and cook it for 2-3 minutes on both sides until golden in colour.
- Remove it into an absorbent sheet and keep it aside for further use.
For Tari Wala Fara
- In a kadai, add oil, once it’s hot, add cumin seeds, asafoetida, dry kashmiri red chillies and let it splutter for a minute.
- Add tomato puree, degi red chili powder, turmeric powder, coriander powder, garam masala, cumin powder and cook it for 4-5 minutes.
- Add a little water and give it a good mix.
- Add water to adjust the consistency, add butter, salt to taste, oil, sugar and give it a quick boil.
- Add fried fara and let it cook for a while.
- Finish it with butter and give it a good mix.
- Transfer it into a serving dish and garnish it with coriander sprig.
- Serve hot with prepared chutney.
For Tadka
- In a pan, add oil, once it’s hot, add cumin seeds, small mustard seeds, fennel seeds, dry red chillies, green chillies, fresh coriander leaves, curry leaves and saute it for a minute.
- Add fried fara, salt to taste and toss it on high flames 2-3 minutes.
- Finish it with lemon juice and mix it well.
- Transfer it to a serving dish, garnish it with coriander sprig and lemon wedge.
- Serve hot with prepared chutney.
