
Veg Thukpa Soup थुक्पा सूप घर पर बनाने का आसान तरीका Tibetan Noodle Soup
Your favourite street style noodle soup, Thukpa. This is the Veg version and there are tips for non veg version too :)
Ingredients
For Noodles Dough
2 cups whole Wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
⅓ cup Water, पानी
1 ½ tsp Oil (after kneading) तेल
For Thukpa Paste
1 ½ inch Ginger (peeled & roughly chopped) अदरक
1 ½ large Onions, roughly chopped, प्याज
2 medium Tomato, diced, टमाटर
2 tbsp Tender coriander stems, roughly chopped, धनिया के डंठल
5-6 no. fresh Red chillies, ताज़ा लाल मिर्च
Salt to taste, नमक स्वादअनुसार
2 tsp Sesame oil, तिल का तेल
Other Ingredients
1-2 tbsp Flour (for dusting) मैदा
For Thukpa
2 tsp Oil, तेल
Prepared Paste, तैयार किया हुआ पेस्ट
10-12 no. Mushrooms, sliced, मशरूम
2 medium Carrot, julienned, गाजर
½ small Cabbage, julienned, पत्ता गोभी
4-5 cups Vegetable stock, वेजिटेबल स्टॉक
Prepared fresh Noodles, तैयार किया हुआ फ्रेश नूडल्स
8-10 no. French beans, diagonally cut, फ्रेंच बींस
¼ cup Spring onion, chopped, प्याज़ पत्ता
½ tsp Vinegar, सिरका
2 tsp Sesame oil, तिल का तेल
For Boiling Noodles
1 ltr Water, पानी
Salt to taste, नमक स्वादअनुसार
1 pkt Noodles, नूडल्स
1 tsp Oil, तेल
For Chili Oil
⅓ cup Oil, तेल
3-4 no. Garlic cloves, roughly crushed, लहसुन
2 tsp Toasted white Sesame seeds, सफेद तिल
2 tbsp Chili flakes, कुटी हुई लाल मिर्च
1 tbsp Light soy sauce, सोया सॉस
For Assembling
Cooked Thukpa, पका हुआ थुकपा
Boiled Noodles, उबले हुए नूडल्स
Prepared Chili Garlic Oil, तैयार किया हुआ चिली आयल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Noodles Dough
- In a bowl, add whole wheat flour, salt to taste, water and knead it into medium hard dough.
- Apply oil and keep it aside for 10-15 minutes to rest.
- Take a small amount of dough and make thin noodles or in any desired shape.
- Dust it with some flour and keep it aside for further use.
For Thukpa paste
- In a bowl, add ginger, onions, tomato, tender coriander stems, fresh red chilies, salt to taste and sesame oil.
- Transfer it to a grinder jar and make a smooth paste.
- Keep it aside for further use.
For Thukpa
- In a wok, heat oil, add prepared thukpa paste and cook it for 4-5 minutes until thick or cooked well.
- Add mushroom, carrots, cabbage and sauté for a few minutes until half cooked.
- Add vegetable stock and simmer it for a while.
- Add prepared fresh noodles, french beans, spring onion, vinegar and let it boil for 5-6 minutes until cooked well.
- Finish it with some sesame oil and transfer it to a serving dish.
- Garnish it with boiled noodles, coriander sprig and prepared chili oil.
- Serve hot.
For Boiling Noodles
- In a pot, add water and get it to a roaring boil.
- Add noodles and boil it for 5-6 minutes on high flames.
- Transfer it to a tray, add oil and mix it well.
- Keep it aside for further use.
For Chili Garlic Oil
- In a pan, add oil, garlic cloves, toasted white sesame seeds, chili flakes and cook it for a minute.
- Add soy sauce and mix it well.
- Transfer it to a bowl and keep it aside for further use.
