Chilli Paneer Momos एकदम पटाका snack पनीर चिल्ली मोमो Kripsy Paneer Chili Momo
For all of you who voted for more Paneer and more Kripsy snack recipes, here's a combination of both! Chili Paneer or Paneer Chilli and momo ka mazaa.
Ingredients
For Dough
2 cups Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
¾ cup Water, पानी
2 tbsp Oil (after kneading) तेल
For Stuffing
2 medium Carrots (peeled & finely chopped) गाजर
½ small Cabbage, finely chopped, पत्तागोभी
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
1 tbsp Light soy sauce, सोया सॉस
3 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & chopped) अदरक
500 gms Paneer, पनीर
2-3 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
1 tsp Black pepper powder, काली मिर्च पाउडर
For Sauce Mixture
2 tbsp Vinegar, सिरका
2 tbsp Light soy sauce, सोया सॉस
1 heaped tbsp Green chilli sauce, ग्रीन चिली सॉस
1 heaped tbsp Red chilli sauce, रेड चिली सॉस
1 tbsp Sugar, चीनी
1 inch Ginger (peeled & chopped) अदरक
2 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल
2-3 heaped tbsp Tomato ketchup, टोमॅटो केचप
¼ cup Water, पानी
For Paneer Chilli Momos
2 tbsp Oil, तेल
4-5 no. Dry kashmiri red chillies, chopped, सूखी कश्मीरी लाल मिर्च
2 small Onions, cut into diced, प्याज
1 medium Capsicum, cut into diced, शिमला मिर्च
Prepared sauce mixture, तैयार किया हुआ सॉस का मिश्रण
Fried momos, तले हुए मोमोज
Other Ingredients
Oil for frying, तलने के लिए तेल
For Garnish
Toasted sesame seeds, भुने हुए तिल
Spring onion greens, finely chopped, हरा प्याज
Coriander sprig, धनिया पत्ता
Process
For Dough
- In a bow, add refined flour, salt to taste, sugar, water and knead it into a smooth dough.
- Drizzle some oil and keep it aside for a while.
For Stuffing
- In a bowl, add carrots, cabbage, salt to taste, a pinch of sugar, light soy sauce and mix it well.
- Keep it aside for a while until vegetables lose their moisture.
- Squeeze out the moisture and transfer vegetables into a bowl.
- Add green chillies, ginger, paneer, fresh coriander leaves, salt to taste, black pepper powder and mix it well.
- Keep it aside for further use.
For Sauce Mixture
- In a bowl, add vinegar, light soy sauce, green chilli sauce, red chilli sauce, sugar, ginger, tender coriander stems with roots, tomato ketchup, water and give it a good mix.
- Keep it aside for further use.
For Frying
- Take prepared dough, divided into small lemon size balls, flatten with the rolling pin and add a spoonful of prepared stuffing.
- Close the edges, shape them by making pleats on one side and sticking on the other side. Make it a crescent or any desired shape.
- Heat oil in a kadai, add prepared momos in oil and fry them until crispy and golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
For Paneer Chilli Momos
- In a wok, add oil, once it’s hot, add dry kashmiri red chillies and saute it for a minute.
- Add onions, capsicum and toss it on high flames.
- Add prepared sauce mixture and cook it for 2-3 minutes.
- Add fried momos and saute it on high flames for a while.
- Transfer it to a serving dish, garnish it with toasted sesame seeds, spring onion greens and coriander sprig.
- Serve hot.
