Mutton Kabuli Pulao मटन काबुली पुलाव Afghan style Mutton Yakhni Pulao
Is it Kabuli Pulao because it's made during weddings? Or because of Kabuli chana? Or because it's famous in Kabul! Well, check out the video to find out and do try this simple, yet exotic Mutton Yakhni style Pulao.
Ingredients
For Cooking Mutton
½ cup Ghee, घी
1 ½ cups Oil, तेल
1 no. Bay leaf, तेज़ पत्ता
½ inch Cinnamon stick, दालचीनी
4 large Onions, sliced, प्याज
1 ½ kg Mutton with bones, मटन
Salt to taste, नमक स्वादअनुसार
1 tsp Caraway seeds, शाही जीरा
2-3 cups Water, पानी
For Raita
5-6 no. Garlic cloves, grated, लहसुन
1 ½ cups Curd, beaten, दही
1 no. Green chilli, chopped, हरी मिर्च
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
2 tbsp fresh Mint leaves, chopped, पुदीना पत्ता
For Afghani Chaar Masala
Salt to taste, नमक स्वादअनुसार
2 tsp Cumin seeds, जीरा
7-8 no. Black cardamom, बड़ी इलायची
5-6 no. Cloves, लौंग
1 inch Cinnamon stick, दालचीनी
For Layering Pulao
¼ cup Water, पानी
Cooked mutton, पका हुआ मटन
2 medium Carrots (peeled & cut into batons) गाजर
2 tbsp Raisins, किशमिश
1 tbsp prepared Chaar masala, तैयार किया हुआ चार मसाला
1 kg Sella basmati rice (soaked for 20 minutes) सेला बासमती चावल
2 medium Carrots (peeled & cut into batons) गाजर
2 tbsp Raisins, किशमिश
2 tbsp prepared Chaar masala, तैयार किया हुआ चार मसाला
¼ tsp Nutmeg, grated, जायफल
4-5 cups Hot water, गरम पानी
Salt to taste, नमक स्वादअनुसार
Other Ingredients
4-5 medium Carrots (peeled & cut into batons) गाजर
3-4 tbsp Raisins, किशमिश
Dough, गुंधा हुआ आटा
For Garnish
Mint sprig, पुदीना पत्ता
Process
For Cooking Mutton
- In a handi, add ghee, oil, once it’s hot, add bay leaf, cinnamon stick, onions and saute it until translucent.
- Add mutton with bones, salt to taste, caraway seeds and saute it for a while.
- Add water and mix well, cover it with a lid and let it cook for 35-40 minutes until mutton is cooked well.
- Keep it aside for further use.
For Raita
- In a bowl, add garlic, curd, green chili, crushed black peppercorns, fresh mint leaves and give it a good mix.
- Transfer it to a serving bowl and garnish it with mint sprig.
- Serve hot with prepared mutton kabuli pulao.
For Afghani Chaar Masala
- In a pan, add salt to taste, cumin seeds, black cardamom, cloves, cinnamon stick and roast them for 2-3 minutes until aromatic.
- Transfer it to a mixer grinder jar and grind it into a fine powder.
- Keep it aside for further use.
For Layering Pulao
- In a handi, add water, cooked mutton and spread it evenly.
- Layer it with carrots, raisins, sprinkle some prepared chaar masala and sella basmati rice.
- Add carrots, raisins, prepared chaar masala, grated nutmeg, hot water, salt to taste and cover it with a lid.
- Seal the edges with a dough and cook it for 15-20 minutes on low flames.
