Ingredients
For Dough
½ kg Refined flour, मैदा
Salt to taste, नमक स्वादअनुसार
A pinch of carom seeds, अजवाइन
80 ml Oil, तेल
Water as required, पानी
½ tsp Oil (after kneading) तेल
For Aloo Chaat
2 tbsp Oil, तेल
½ tsp each Cumin seeds & Fennel seeds (जीरा, सौंफ़)
5 no. Boiled potatoes (peeled & roughly chopped) उबले हुए आलू
1 ½ tsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Black pepper powder, काली मिर्च पाउडर
A pinch of Asafoetida, हींग
Salt to taste, नमक स्वादअनुसार
A pinch of sugar, चीनी
A pinch of dry mango powder, आमचूर पाउडर
For Dal Stuffing
2 heaped tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
2 cups Urad dal paste, उड़द दाल का पेस्ट
¼ tsp Asafoetida, हींग
½ tsp Turmeric powder, हल्दी पाउडर
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tbsp dry Fenugreek leaves, कसूरी मेथी
Salt to taste, नमक स्वादअनुसार
½ tsp dry Mango powder, आमचूर पाउडर
Prepared dal stuffing, तैयार की हुई दाल की स्टफिंग
Other Ingredients
Oil for frying, तलने के लिए तेल
For Kachori Chaat
Prepared dough, तैयार किया हुआ आटा
Water, पानी
Prepared dal stuffing, तैयार की हुई दाल की स्टफिंग
For Assembling
Sweetened curd, मीठा दही
Prepared Aloo Chaat, तैयार किया हुआ आलू चाट
Green chutney, हरी चटनी
Tamarind chutney, इमली की चटनी
Fried kachori, तली हुई कचौरी
For Garnish
Pomegranate pearls, अनार के दाने
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
Coriander sprig, धनिया पत्ता
Process
For Dough
- In a bowl, add refined flour, salt to taste, a pinch of carom seeds, oil and mix it well.
- Add water as required and knead it into a semisoft dough.
- Apply oil on dough and leave it aside for a while.
- Divide the dough into medium lemon size balls and make a thin roti.
- Spread prepared dal stuffing evenly and cover it with another layer of roti.
- Cut with a knife and give it a desired shape.
- Heat oil in a kadhai, once it’s moderately hot, add kachoris, fry them until crispy and golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
For Aloo Chaat
- In a kadhai, add oil, once it’s hot, add cumin seeds, fennel seeds and let it splutter well.
- Add boiled potatoes, coriander powder, turmeric powder, degi red chili powder, black pepper powder, a pinch of asafoetida and cook it for 2-3 minutes.
- Add salt to taste, a pinch of sugar, dry mango powder and give it a good mix.
- Transfer the aloo chaat mixture in a tray and keep it aside for further use.
For Dal Stuffing
- In a handi, add oil, once it’s hot, add cumin seeds, urad dal paste and cook it for 10-12 minutes on medium flames.
- Add a pinch of asafoetida, turmeric powder, degi red chilli powder, dry fenugreek leaves and cook it for a while.
- Add dry mango powder and give it a good mix.
- Transfer the stuffing to a tray and keep it aside for further use.
For Assembling
- In a serving dish, add sweetened curd, prepared aloo chaat, green chutney, tamarind chutney, and place fried kachori.
- Garnish it with pomegranate pearls, sprinkle a pinch of degi red chili powder and coriander sprig.
- Serve hot.
