Ingredients
For Dough
2 cups Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
2 tsp Ghee, घी
¼ tsp Carom seeds, अजवाइन
Water as required, पानी
1 tsp Oil (after kneading) तेल
For Cauliflower Stuffing
1 medium Cauliflower, grated, फूलगोभी
Salt to taste, नमक स्वादअनुसार
4 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
1 ½ tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 ½ tsp Prepared Masala, तैयार किया हुआ मसाला
For Masala
2 tsp Cumin seeds, जीरा
1 tsp Coriander seeds, धनिया के बीज
1 tsp Black peppercorns, काली मिर्च के दाने
For Butter Mixture
½ inch Ginger (peeled & roughly sliced) अदरक
3 no. Green chillies, हरी मिर्च
⅓ cup fresh Coriander leaves, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
½ cup Butter, cubed, मक्खन
Other Ingredients
1-2 tbsp Ghee ( for roasting) घी
For Assembling
Curd, beaten, दही
Pickle, अचार
Onion, प्याज
Green chilli, हरी मिर्च
Process
For Dough
- In a bowl, add whole wheat flour, salt to taste, ghee, carom seeds, water as required and knead it into a semi soft dough.
- Apply oil and keep it aside for resting.
For Cauliflower Stuffing
- In a bowl, add grated cauliflower, salt to taste and leave it for 5-10 minutes.
- Squeeze out the excess water from the cauliflower and transfer it to a bowl.
- In the same bowl, add green chillies, ginger, coriander leaves, prepared masala and mix it well.
- Keep it aside for further use.
For Masala
- In a pan, add cumin seeds, coriander seeds, black peppercorns and dry roast it on medium flame for 2-4 minutes.
- Transfer it to a mortar pestle and grind it coarsely.
For Gobi Paratha
- Divide the dough in equal portions and roll it out with the help of a rolling pin.
- Add the prepared stuffing in the center, close it with another roti and seal the edges.
- In a tawa, heat ghee, place the prepared paratha and roast it on both sides until golden in color.
- Transfer it to a serving dish and apply some prepared butter.
- Serve hot with prepared butter mixture, curd, pickle, onion and green chili.
For Butter Mixture
- In a mortar pestle, add ginger, green chillies, fresh coriander leaves, salt to taste and grind it coarsely.
- In a bowl, add butter, add the prepared mixture and mix it well.
- Keep it aside for further use.

The key to a successful Gobi Paratha lies in properly preparing the filling and dough. Grating the cauliflower finely and squeezing out excess moisture is crucial to prevent the filling from becoming soggy. Additionally, allowing the dough to rest before rolling helps in achieving a soft and pliable texture, making it easier to roll out without tearing.
