Hi-Protein Appe Dal कभी ना खाई होगी ऐसी अनोखी दाल Unpolished Dal recipe
No other cuisine celebrates Dals like ours. For instance, I found this age old, nearly lost traditional recipe that's super unique. But a perfect celebration calls for the right kind of Dals. Ingredients
For Cooking Dal
6-7 cups Water, पानी
½ cup Tata Sampann unpolished Yellow moong dal, washed, पीली मूंग दाल
1 cup Tata Sampann unpolished Toor dal, washed, तूर दाल
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
2 sprig Curry leaves, कड़ी पत्ते
4-5 tbsp Tamarind water, इमली का पानी
1 tbsp Jaggery, गुड़
Prepared Appe, तैयार किये हुए अप्पे
Prepared Tadka, तैयार किया हुआ तड़का
For Appe
1 cup Tata Sampann unpolished Chana dal (soaked overnight) भिगोई हुई चना दाल
½ cup Tata Sampann unpolished Urad dal (soaked overnight) भिगोई हुई उड़द दाल
1 sprig Curry leaves, कड़ी पत्ते
2 no. Green chillies (less spicy & roughly torn) हरी मिर्च
1 inch Ginger (peeled & sliced) अदरक
Salt to taste, नमक स्वादअनुसार
2 heaped tbsp Curd, beaten, दही
1 no. Green chili, finely chopped, हरी मिर्च
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
1 sprig Curry leaves, chopped, कड़ी पत्ते
½ tsp Baking soda, बेकिंग सोडा
1 tsp Oil, तेल
For Tadka
3 tbsp Oil, तेल
½ tsp small Mustard seeds, छोटी राई
1 tsp Cumin seeds, जीरा
3 no. dry Bedgi red chillies, सूखी बेड़गी लाल मिर्च
2 sprig Curry leaves, कड़ी पत्ते
Other Ingredients
Oil for greasing, तेल
For Garnish
1 no. Green chilli, cut into diagonally, हरी मिर्च
½ medium Onion, sliced, प्याज
1 sprig Curry leaves, कड़ी पत्ते
Lemon juice, नींबू का रस
Coriander sprig, धनिया पत्ता
Chilli oil, धनिया पत्ता
Process
For Appe
- In a bowl, chana dal, urad dal, curd, semolina and water.
- Transfer it to a mixer grinder jar and grind it into smooth paste.
- Transfer it to a big bowl, add ginger, green chillies, curry leaves, coriander leaves, salt to taste and give it a good mix.
- In a small bow, add oil, baking soda and mix it well.
- Add the soda mixture to the batter and whisk it well.
- Heat a appe chatti, add oil, once it’s hot, add a spoonful of batter and cook it for 5-6 minutes on both sides until cooked well.
- Transfer it to a tray and keep it aside for further use.
For Cooking Dal
- In an earthen pot, add toor dal, yellow moong dal, water, salt to taste, degi red chilli powder, turmeric powder, asafoetida and give it a good mix.
- Cover it with a lid and pressure cook it for 4-5 whistles until cooked well.
- Keep it aside to cool down at room temperature.
For Tadka
- In a handi, add oil, once it’s hot, add fenugreek seeds, mustard seeds, cumins seeds and let it splutter well.
- Add button chillies, shallots, curry leaves and saute it for a minute until shallots are translucent.
- Add turmeric powder, degi red chilli powder, coriander powder, asafoetida and mix it well.
- Add tomato and cook it well for 2-3 minutes.
- Add boiled dal, salt to taste and simmer it well for a while.
- Finish it with some curry leaves and boil it for a minute.
- Transfer it to a serving bowl, garnish it with green chillies, coriander sprig and some lemon juice.
- Serve hot with appe or drop it in with the dal.
