Ingredients

For Cooking Mutton

2 tbsp Oil, तेल

2 tbsp Ghee, घी

2 Bay leaf, तेज पत्ता

1 inch Cinnamon stick, दालचीनी

4 medium Onions, sliced,प्याज

1 kg Mutton (with bones) मटन

Salt to taste, नमक स्वादअनुसार

½ tbsp Tender coriander stem, chopped, धनिया के डंठल

½ tbsp Coriander leaves, chopped, धनिया पत्ता

½ tsp Turmeric powder, हल्दी पाउडर

1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 ½ tsp Coriander powder, धनिया पाउडर

1 ¼ cup Curd, beaten, दही

1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Water as required, पानी

 

For Shalgam Gosht

1 tbsp Ghee, घी

1 tsp Caraway seeds, शाही जीरा

1 inch Ginger (peeled & julienned) अदरक

2 Green chillies (less spicy & broken into half) हरी मिर्च

4-5 no. Turnip, cut into quarter, शलगम

1 tbsp Butter, cubed, मक्खन

Salt to taste, नमक स्वादअनुसार

Cooked Mutton, पका हुआ मटन

1 ½ tbsp Butter, cubed, मक्खन

2-3 no. Black cardamom, crushed, बड़ी इलायची

1 tbsp Coriander leaves, finely chopped, धनिया पत्ता

1 tbsp Butter, cubed (to finish) मक्खन

 

For Garnish

Coriander sprig, धनिया पत्ता

1 Green chili, हरी मिर्च

Process

For Cooking Mutton

  • In a pressure cooker, add oil, ghee, once it’s hot, add bay leaf, cinnamon stick, onions and sauté it until the onions are translucent.
  • Add mutton, salt to taste, coriander stems, coriander leaves and sauté it for a minute.
  • Add turmeric powder, degi red chili powder, coriander powder and mix it well.
  • Add curd, ginger garlic paste and cook it for a while on moderate heat.
  • Add water, cover it with the lid and cook it for 7-8 whistles.

 

For Shalgam Gosht

  • In a handi, add ghee, once it’s hot, add caraway seeds and let it splutter well.
  • Add ginger, green chillies, turnip and sauté well, add butter, salt to taste and cook it for a while on moderate heat.
  • Add cooked mutton and mix it well, add butter, black cardamom, coriander leaves and mix it well.
  • Mash a shalgam to thicken the gravy and cook it well for a while or until the mutton is tender..
  • Finish it with some butter and transfer it to a serving bowl.
  • Garnish it with coriander sprig and green chili.
  • Serve hot with roti.
