Paneer Crispy चिल्ली पनीर क्रिस्पी रेस्टोरेंट जैसा Chinese Chilli Paneer Starter

One of the most requested recipes is Paneer starter dishes, especially Crispy Paneer, or Paneer Chilli dry. So here we are, 2 recipes for the price of one :) Do try this spicy, Kripsy Paneer Chilli dry and enjoy this weekend.

Paneer Crispy चिल्ली पनीर क्रिस्पी रेस्टोरेंट जैसा Chinese Chilli Paneer Starter Recipe - Ranveer Brar

Ingredients

For Marination

400 gms Paneer, cut into medium size, पनीर

Salt to taste, नमक स्वादअनुसार

2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 ½ tsp toasted Sesame seeds, सफेद तिल

1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

¼ cup Cornflour, कॉर्नफ्लोर

 

For Batter

1 tbsp Cornstarch, कॉर्नस्टार्च

½ cup Refined flour, मैदा

¼ tsp Baking soda, बेकिंग सोडा

A pinch of salt, नमक

1 cup Water, पानी

1 tbsp Cornstarch, कॉर्नस्टार्च

Oil for frying, तेल तलने के लिए

 

For Paste

½ inch Ginger, peeled, slice, अदरक

4-5 Garlic cloves, लहसुन

 

For Sauce

2 tsp Oil,  तेल

Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tsp toasted Sesame seeds, सफेद तिल

2 tsp Schezwan sauce, शेज़वान सॉस

2 Dry red chillies, broken into half, सूखी लाल मिर्च

2 tbsp Water, पानी

2 tbsp Tomato ketchup, टाॅमेटो केचप

1 tsp Red chilli sauce, (optional) रेड चिली सॉस

¼ tsp Soy sauce, सोया सॉस

Water, पानी

½ tsp Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

Fried Paneer, तला हुआ पनीर

½ tsp toasted Sesame seeds, सफेद तिल

1 tbsp Spring onion, chopped,  प्याज़ पत्ता

 

For Tempering

1 tsp Oil, तेल

2 Garlic cloves, chopped, लहसुन

1 Green chilli, chopped,  हरी मिर्च

Fried Paneer, तला हुआ पनीर

½ tbsp tender Coriander stem, chopped, धनिया के डंठल

A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

 

For Garnish

Tempura trimmings, टेम्पुरा ट्रिमिंग्स

Spring onions, chopped, प्याज़ पत्ता

A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

 

Process

For Marination

  • In a bowl, add paneer, salt to taste, ginger garlic paste, toasted sesame seeds, degi red chili powder and mix everything well.
  • Add corn flour or arrowroot powder and mix it well and keep it aside for further use.

 

For Batter

  • In a bowl, add cornstarch, refined flour, baking soda, salt, water and mix everything well.
  • Make sure there’s no lumps, keep aside for further use.

For Frying

  • Heat oil in a kadai on medium flame, once the oil is medium hot.
  • Dip the first marinated paneer into the batter and coat it well.
  • Dip into the hot oil and fry on medium to low flame.
  • Remove in an absorbent paper and keep it aside for further use.
  • Fry them again so that it turns evenly crisp and golden in color.
  • Drain them in an absorbent paper to remove excess oil.
  • Drizzle the remaining batter into the hot oil and deep fry on medium flame until golden in color and crisp.
  • Remove in an absorbent paper and keep it aside for further use.

 

For Paste

  • In a mortar pestle, add ginger, garlic and and make a rough paste of it and keep aside for further use.

 

For Sauce

  • In a deep kadai or wok, add oil, prepared ginger garlic paste and saute well.
  • Add toasted sesame seeds, schezwan sauce, dry red chillies and mix it well.
  • Add little water, tomato ketchup, red chilli sauce, soy sauce and water mix everything well on medium flame.
  • Add sugar, salt to taste, fried paneer and toss everything well.
  • Finish it with toasted sesame seeds, spring onion.
  • Garnish with tempura trimming and serve hot.

 

For Tempering

  • Heat oil in a wok, add garlic, green chilli and saute it well.
  • Add fried paneer, tender coriander stem, degi red chilli and toss everything well.
  • Garnish with spring onion and serve hot.
