Mutton Shami Kebab शमी कबाब Ramadan special Lucknow style Shami Kabab Recipe - Ranveer Brar

Ingredients

For Marination

1 kg Mutton with bones (shoulder cut) मटन

250 gms Chana dal, soaked, चना दाल

1 cup Curd, beaten, दही

1 tbsp Ghee, घी

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वाद अनुसार

3-4 no. Kashmiri dry red chilies, कश्मीरी सूखी लाल मिर्च

3 no.  Black cardamom, बड़ी इलायची

1 tsp Black peppercorns, काली मिर्च के दाने

1 Mace, जावित्री

1 tsp Caraway seeds, शाही जीरा

½ tsp Coriander seeds, धनिये के बीज

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tsp Coriander powder, धनिया पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

 

For Shammi Mixture

1 tbsp Ghee, घी

2 medium size Onions, sliced, प्याज

1 inch Ginger (peeled & sliced) अदरक

Marinated Mutton, मैरिनेटेड मटन

¼ cup Water, पानी

 

¼ tsp Black pepper powder, काली मिर्च का पाउडर

Salt to taste, नमक स्वादअनुसार

 

For Chutney

⅓ cup Walnuts

½ tsp Ghee, घी

Salt to taste, नमक स्वादअनुसार

1 tbsp Flax seeds, अलसी के बीज

1-2 no. Green chilies, less spicy, हरी मिर्च

½ inch Ginger, grated, अदरक

few Mint leaves, chopped, पुदीने के पत्ते

1 tbsp Tender Coriander stems, chopped, धनिया के डंठल

Salt to taste, नमक स्वादअनुसार

½ tsp Sugar, चीनी

¼ tsp Black pepper powder, काली मिर्च का पाउडर

½ cup Curd, beaten, दही

 

For Stuffing

1 large Onion, finely chopped, प्याज

2-3 no. Green chillies (less spicy & spicy) chopped, हरी मिर्च

1 tbsp Mint leaves, chopped, पुदीने के पत्ते

1 tbsp Coriander leaves, finely chopped, नमक स्वादअनुसार

Salt to taste, नमक स्वादअनुसार

 

For Shikampuri kebab

Prepared Mixture, तैयार किया हुआ शमी मिश्रण

Prepared Stuffing, तैयार किया हुआ मिश्रण

Oil for frying, तलने के लिए तेल

 

For Shammi kebab

Prepared Mixture, तैयार किया हुआ शमी मिश्रण

Prepared Stuffing, तैयार किया हुआ मिश्रण

1 Egg, beaten, अंडा

Oil for shallow frying, तलने के लिए तेल

 

For Garnish

Coriander sprig, धनिया पत्ता

Onion roundels, लच्छा प्याज

Lemon wedges, नींबू फांक

A pinch degi red chili powder, देगी लाल मिर्च पाउडर

Process

For Marination

  • In a bowl, add mutton, chana dal, curd, ghee, ginger garlic paste, salt to taste, kashmiri dry red chili, black cardamom, black peppercorns, mace, caraway seeds, coriander seeds, degi red chili powder, coriander powder, turmeric powder and mix it well.
  • Keep it aside for further use.

 

For Shammi Mixture

  • In a pressure cooker, add ghee, once it’s hot, add onion and sauté until Translucent.
  • Add ginger, marinated mutton, water and cook it for 7-8 whistles or until cooked well.
  • Transfer it to a parat and let it cool down, separate the bones and flesh.
  • Grind it to a smooth mixture, add black pepper powder, salt to taste and keep it aside for further use.

 

For Chutney

  • In a pan, add walnut, ghee, flax seeds and toast it for a minute.
  • Transfer it to a bowl, add green chilies, ginger, mint leaves, coriander stems, salt to taste, sugar, black pepper powder, curd and mix it well.
  • Keep it aside for further use.

For Stuffing

  • In a bowl, add onion, green chilies, mint and mix it together.
  • Keep it aside for further use.

 

For Shikampuri kebab

  • Take the prepared mixture, stuff the filling and make lemon size balls. Give it a desired shape.
  • In a pan, add oil, once it’s hot, place the kebab and shallow fry until golden brown in color.
  • Transfer it to a serving dish and garnish it with coriander sprig, lemon wedges.
  • Serve hot with chutney.

 

For Shammi kebab

  • Take the prepared mixture, add prepared stuffing and mix it well.
  • Make lemon size balls and give it a desired shape.
  • In a pan, add oil, once it’s hot, place the kebab and shallow fry until golden brown in color.
  • Transfer it to a serving dish and garnish it with coriander sprig, lemon wedges.
  • Serve hot with chutney.
