Methi Malai Paneer Restaurant Style शाही मेथी मलाई पनीर की आसान सेहतमंद रेसिपी Recipe - Ranveer Brar


For Soak Methi Leaves

 2 cups fresh Fenugreek leaves, ताजा मेथी के पत्ते

2 cups Water, पानी

Salt to taste, नमक स्वादानुसार

For Paste

15-18 Cashewnut, blanched, काजू

3 medium size Onion, roughly chopped, प्याज

2 cups Water, पानी

1 tsp Sugar, चीनी


For Gravy

1 ½ tbsp Ghee, घी

½ inch Cinnamon stick, दालचीनी

1 Green cardamom, हरी इलायची

2 Cloves, लॉन्ग

8-10 Black peppercorns, काली मिर्च के दाने

1 Bayleaf, तेजपत्ता

Prepared paste, तैयार पेस्ट

½ inch Ginger, slice, अदरक

2 Green chilli, (into half), हरी मिर्च

½ cup Water, पानी

1 cup Curd, beaten, दही

1 cup Water, पानी

Salt to taste, नमक स्वादानुसार

For Methi Paneer

1 tbsp Ghee, घी

½ tsp Cumin seeds, जीरा

A pinch of asafoetida, हींग

Fenugreek leaves, soaked, chopped, ताजा मेथी के पत्ते

½ tsp Sugar, चीनी

½ tsp Turmeric powder, हल्दी पाउडर

¼ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

250 gms Paneer, small cubes, पनीर

Prepared Gravy, तैयार की हुई ग्रेवी

1 tbsp fresh Cream, ताजा क्रीम

For Tadka

1 tbsp Oil, तेल

2 dry Red chilli, सुखी लाल मिर्च

For Garnish

Coriander leaves, धनिया पत्ता

Chilli oil, मिर्च का तेल


For Soak Methi Leaves

  • In a bowl, add fenugreek leaves, water, salt to taste and keep it aside for 5-10 minutes.

For Paste

  • In a deep pan, add water, sugar, onion, cashewnut and blanched them well.
  • Onces it’s done transfer it into a grinder and make a smooth paste of it.

For Gravy

  • In a kadai, add ghee onces it’s hot add cinnamon stick, green cardamom, cloves, black peppercorns, bayleaf let it splutter.
  • Add prepared paste and saute it well on medium flame.
  • Add ginger, green chilli and little water while sauteing it.
  • Add curd and mix everything well.
  • Add water, cover it with the lid and cook for 15-20 minutes.
  • Strain the gravy into a bowl. Remove the whole spices.

For Methi Paneer

  • In a pan, add ghee onces it’s hot, add cumin seeds, asafoetida, chopped fenugreek leaves and saute it well.
  • Add sugar, turmeric powder, degi red chilli powder and saute it for 2 minute.
  • Add paneer cubes and saute on low flame for 2 minutes.
  • In the same pan, add prepared gravy and mix everything well on medium flame.
  • Check the seasoning and cook for 5-10 minutes on medium flame.
  • Transfer the methi malai paneer in a serving dish and pour the tadka on top of it.
  • Garnish it with coriander sprig serve hot.

For Tadka

  • In a small pan, add ghee once it’s hot add dry red chilli and saute it for a minute.
