Ingredients

For Falooda Sev

3 cups Water, पानी

1 cup Cornstarch, कॉर्नस्टार्च

 

Other Ingredients

Iced Chilled water, बर्फ का पानी

 

For Kulfi Mixture

5 no. Mangoes (peeled & diced) आम

1 cup Condensed milk, कंडेंस्ड मिल्क

1 cup Rabdi, रबड़ी

 

For Assembling Mango Kulfi

Mango (peeled & sliced)आम

Almonds, sliver, बादाम

Prepared Mango Kulfi, तयार की हुई आम की कुल्फी

Prepared Falooda sev, तयार किया हुआ फालूदा की सेव

Rose syrup, गुलाब सिरप

Basil seeds, सब्जा बीज

Condensed milk, कंडेंस्ड मिल्क

Pistachios (blanched & sliver) पिस्ता

 

For Mango Falooda

2 tbsp Rose syrup, गुलाब सिरप

Prepared Falooda sev, तयार किया हुआ फालूदा की सेव

Mangoes, cubes, आम

1 tbsp Basil seeds, सब्जा बीज

Chilled Milk, ठंडा दूध

Almonds, sliver, बादाम

Prepared Mango Kulfi, तयार की हुई आम की कुल्फी

1 tbsp Tutti frutti, टूटी फ्रूटी

 

For Garnish

Almonds, sliver, बादाम

Mint sprig, पुदीना पत्ता

Mango, sliced, आम

 

For Garnish

Pistachios (blanched & sliver) पिस्ता

Process

For Falooda Sev

  • In a saucepot, add water, cornstarch and stir it well to avoid lumps.
  • Cook it for 2-3 minutes until translucent on medium to low flame.
  • Transfer it to a mold, pipe out the mixture in iced chilled water.
  • Keep it in the refrigerator for a while to get the desired shape and structure..

 

For Kulfi Mixture

  • In a bowl, add mangoes, condensed milk, rabdi and blend it finely with the help of a hand blender.
  • Pour the ladleful mixture in a kulfi mold and transfer it in the freezer for 6-7 hours.
  • Keep it aside for further use.

 

For Assembling Mango Kulfi

  • On a serving dish, add mango slice, almonds, place prepared kulfi, add prepared falooda sev and top it up with some rose syrup.
  • Garnish it with basil seeds, condensed milk and pistachios.
  • Serve chilled.

 

For Mango Falooda

  • In a serving glass, add rose syrup, prepared falooda sev, mangoes, basil seeds, pour chilled milk, almonds, prepared mango kulfi and tutti frutti.
  • Garnish it with almonds, mint sprig and mango.
  • Serve chilled.
