
Ingredients
4 tbsp Oil, तेल
4 Large Potato, peeled, boiled, cube, आलू
½ cup Spring Onions, sliced, प्याज पत्ता
1 inch Ginger, chopped, अदरक
4 -5 Garlic, chopped, लहसुन
3 – 4 Dry Red Chilies,broken , लाल मिर्च
2 tbsp Soy Sauce, सोया सॉस
2 tsp Sugar, चीनी
¼ cup Roasted Peanuts, मूंगफली
1 tbsp Red Chilli Sauce, रेड चिल्ली सॉस
1 cup Vegetable Stock/ water, वेजिटेबल स्टॉक
Salt to Taste, नमक स्वादअनुसार
2 tsp Cornflour, कॉर्नफ्लोर
2 tbsp Chilli Oil, चिल्ली आयल
2 stalks Spring Onion Greens, प्याज पत्ता
Process
- Heat oil in a non-stick pan. Add potatoes and Shallow fry till light golden. Drain on absorbent paper.
- Mix cornflour in ¼ cup vegetable stock and set aside.
- Heat chilli oil in another non-stick pan. Add red chillies and sauté for a minute or until crisp. Add onion, ginger and garlic and sauté till soft. Add soy sauce, red chilli sauce, sugar, salt and peanuts and mix.
- Add the remaining vegetable stock and mix well.
- Add cornflour mixture to the pan and cook until the sauce thickens. Add potatoes and mix gently.
- Serve hot garnished with spring onion.
This was delicious! It could use some greens, maybe bell pepper or broccoli, but loved the flavors.
