Kathal/Jackfruit Shami Kebab कटहल के लाजवाब कबाब ‘Meatless’ Bun Kabab bonus

Ingredients

For Cutting Jackfruit

1-2 tbsp Mustard oil, सरसों का तेल

1kg Jackfruit (peeled & diced), कटहल

 

For Kebab Mixture

2-3 tbsp Mustard oil, सरसों का तेल

½ tbsp Coriander seeds, धनिये के बीज

1 tbsp Black Peppercorns, काली मिर्च के दाने

1 tsp Cumin seeds, जीरा

4-5 no. Cloves, लौंग

1 ½ inch Ginger (peeled & roughly sliced), अदरक

3-4 no. Green Chillies (less spicy & roughly chopped), हरी मिर्च

3-4 no. Garlic cloves, लहसुन

1kg Jackfruit (peeled & diced), कटहल

1 cup Chana dal (washed), धुली हुई चना दाल

3 no. Black Cardamom, बड़ी इलायची

5-6 no. Green Cardamom, हरी इलायची

Salt to taste, नमक स्वादअनुसार

1 heaped tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

1 tsp Turmeric powder, हल्दी पाउडर

2-3 cups Water, पानी

1 tbsp Tender Coriander stems (chopped), धनिया के डंठल

 

For Kathal Ke Kebab

Cooked Kebab Mixture (paste), पके हुए कबाब मिश्रण का पेस्ट

3-4 no. Green Chillies (less spicy & finely chopped), हरी मिर्च

½ inch Ginger (peeled & finely chopped), अदरक

2-3 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता

Salt to taste, नमक स्वादअनुसार

Cooked Kebab Mixture (shredded), पके हुए कबाब का मिश्रण

¾ cup Roasted Gram flour, भुने चने का बेसन

Salt to taste, नमक स्वादअनुसार

1 tsp Garam masala powder, गरम मसाला

 

For Cooking Kebab

1-2 tbsp Ghee, घी

Prepared Kebabs, तैयार किए हुए कबाब

 

For Salad

1 medium Onion (sliced), प्याज

1 tsp Lemon juice, नींबू का रस

1 tsp Mint leaves (finely chopped), पुदीने का पत्ता

1 no. Green Chilli (less spicy & finely chopped), हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Bun Kebab

Ladi Pav, लादी पाव

Green Chutney, हरी चटनी

Fried Kebabs, तले हुए कबाब

Prepared Salad, तैयार किया हुआ सलाद

 

For Garnish

Lemon wedges, नींबू की फांक

Coriander sprig, धनिया पत्ता

Green Chutney, हरी चटनी

Process

For Cutting Jackfruit

  • Apply mustard oil on a knife, take jackfruit, cut into half, peel the skin and cut into diced shapes.
  • Keep it aside for further use.

 

For Kebab Mixture

  • In a pressure cooker, add mustard oil, once it’s smoky hot, add coriander seeds, cumin seeds, cloves, ginger, green chillies, garlic, jackfruit and cook for a minute.
  • Add washed chana dal, black cardamom, green cardamom, salt to taste, degi red chilli powder, turmeric powder, water, tender coriander stems,.
  • Now, give it a good mix, cover it with the lid and cook for 4-5 whistles or until it’s cooked.
  • Keep it aside to depressurize the cooker.
  • Once the mixture cools down then transfer it into the mixer grinder jar and grind it into smooth paste.
  • Keep it aside for further use.

For Kathal Ke Kebab

  • In a bowl, add cooked kebab mixture, green chillies, ginger, fresh coriander leaves, salt to taste and give it a good mix.
  • Add some shredded cooked kebab mixture, roasted gram flour, salt to taste, garam masala powder and mix everything well.
  • Take a spoonful of prepared mixture, shape it into lemon size balls, press it a little to form kebabs.
  • Leave it aside for further use.

For Cooking Kebab

  • In a pan, add ghee, once it’s hot, place one by one prepared kebabs and fry them on both slides until crisp texture and light golden in colour.
  • Transfer it into the serving platter, garnish it with lemon wedge and coriander sprig.
  • Serve hot with green chutney.

For Salad

  • In a bowl, add onions, lemon juice, fresh mint leaves, green chilies, salt to taste and mix it well.
  • Transfer it into the serving bowl and serve with fried kebabs.

For Bun Kebab

  • Take, ladi pav, cut into the middle, apply green chutney, place fried kebab, add a spoonful of prepared salad and transfer it into the serving platter.
  • Serve hot with green chutney.
