
High Protein Chana Chaat नए तरीके से काले चने की चाट chatpata Chana Chaat

Ingredients
For Boiling
4-5 cups Water, पानी
2 Green chillies, हरी मिर्च
¼ inch Ginger, slice, अदरक
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
A pinch of asafoetida, हींग
1 cup Black chickpeas (soaked overnight) काले चने
⅓ cup Peanuts (with skin, soaked overnight) मूंगफली
½ cup Soya bean (soaked overnight) सोयाबीन
For Bouquet Garni
9-10 Black peppercorns, काली मिर्च के दाने
1 Black cardamom, काली इलाइची
2-3 Cloves, लॉन्ग
For Chaat Masala
1 ½ tsp Cumin seeds, जीरा
1 tsp Fennel seeds, सौंफ़
10-12 Black peppercorns, काली मिर्च के दाने
3-4 Fenugreek seeds, मेथी दाना
1 tsp Coriander seeds, धनिया के बीज
2-3 Cloves, लौंग
A pinch of asafoetida, हींग
1 ¼ tsp Dry mango powder, आमचूर पाउडर
1 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
¼ tsp Dry ginger powder, सौंठ
For Chana Chaat
1 inch Ginger, chopped, अदरक
2-4 Green chillies (less spicy, finely chopped) हरी मिर्च
1 ½ tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 medium size Onion, chopped, प्याज
¼ cup Raw mango, chopped, कच्चा आम
2 small Tomatoes, chopped, टमाटर
Boiled Mixture, उबले हुए मिश्रण
2 tbsp pomegranate pearls, अनार के दाने
1 tsp Lemon juice, नींबू का रस
2 ½ tsp Prepared Chaat Masala, तैयार किया हुआ चाट मसाला
Prepared Tadka, तैयार किया हुआ तड़का
For Tadka
2 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
6-7 Button chillies, बटन मिर्च
For Garnish
Pomegranate pearls, अनार के दाने
Sev (optional) सेव
Coriander sprig, धनिया पत्ता
Process
For Boiling
- In a sauce pot, add water, green chillies, ginger, salt to taste, and sugar.
- Add degi red chili powder, asafoetida, black chickpeas, peanuts, soybean.
- Put the bouquet garni and boil until it’s cooked well.
- Boil it for 15-20 minutes on medium flame.

For Bouquet Garni
- In a muslin cloth, add black peppercorns, black cardamom, cloves and tie a knot.
For Chaat Masala
- In a non-stick pan, add cumin seeds and dry roast it well. Transfer it into a bowl.
- Same as above, dry roast all the spices separately and transfer it into a bowl.
- Add asafoetida, dry mango powder, sugar, salt to taste, dry ginger powder.
- Transfer it into a grinder jar and grind into a fine powder and keep it aside for further use.
For Chana Chaat
- In a large bowl, add ginger, green chillies, coriander leaves, onion, and raw mango.
- Add tomato, boiled mixture, pomegranate pearls, lemon juice.
- Add prepared chaat masala and mix everything well.
- Add prepared tadka. Transfer it into a serving bowl, garnish it with pomegranate pearls, sev.
- Add coriander sprig and serve.
For Tadka
- In a pan, add oil, once it’s hot, add cumin seeds, button chili and let it splutter well.
- Keep it aside for further use.
