Lucknow style Chicken Tawa Pulao बाजार जैसा तवा चिकन पुलाओ Chicken Pulao

After the amazing response to Chicken Tawa Masala few weeks ago (recipe link below), I've had immense requests for Chicken Tawa Pulao too! so here you go :)

Ingredients

For Chicken Marination

600 gms Chicken (thigh boneless & cut into strips) चिकन

Salt to taste, नमक स्वादअनुसार

2 tsp Oil, तेल

2 tsp Lemon juice, नींबू का रस

1 inch Ginger (peeled & grated) अदरक

2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 heaped tsp Coriander powder, धनिया पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

 

For Tawa Masala

1 heaped tbsp Ghee, घी

1 ½ tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

3 large Onion, sliced, प्याज

1 tbsp Ghee, घी

3 tbsp Prepared Masala, तयार किया हुआ मसाला

4-5 no. Green chillies (less spicy & chopped) हरी मिर्च

3 medium Tomatoes, finely chopped, टमाटर

2-3 tbsp Butter, cubed, मक्खन

Salt to taste, नमक स्वादअनुसार

½ cup Water, पानी

 

For Dry Masala

3 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

3 heaped tbsp Coriander powder, धनिया पाउडर

1 tbsp Turmeric powder, हल्दी पाउडर

2 tsp Cumin powder, जीरा पाउडर

 

For Sauteing Green Peas

⅓ cup fresh Green peas, ताजी हरी मटर

1 tbsp Ghee,घी

¼ cup Water, पानी

 

 

For Sauteing Chicken

2 tbsp Butter, cubed, मक्खन

Marinated chicken, मैरीनेटेड चिकन

 

For Chicken Tawa Pulao

2 tbsp Butter, cubed, मक्खन

1 large Green capsicum, roughly chopped, हरी शिमला मिर्च

1 large Red bell pepper, roughly chopped, लाल शिमला मिर्च

4 cups Cooked rice, पके हुए चावल

Sauteed Green peas, भूने हुए हरे मटर

Prepared tawa masala, तयार किया हुआ तवा मसाला

Sauteed chicken, भुना हुआ चिकन

Salt to taste, नमक स्वादअनुसार

Little water, पानी

½ tbsp dry Fenugreek leaves, crushed, कसूरी मेथी

2 tbsp Butter, cubed, मक्खन

½ cup Spring onion, roughly chopped, हरी प्याज

3-4 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

1 tsp Garam masala, optional, गरम मसाला

 

For Garnish

Tomato, sliced, टमाटर

Cucumber, sliced, ककड़ी

Onions, sliced, प्याज

Cabbage, shredded, पत्ता गोभी

Boiled eggs, sliced, उबले अंडे

Lemon wedge, नींबू की फांक

Green chillies, slit into half, हरी मिर्च

Ginger, julienned, अदरक

Butter, cubed, मक्खन

Coriander sprig, धनिया पत्ता

Process

For Chicken Marination

  • In a bowl, add chicken, salt to taste, oil, lemon juice, ginger, degi red chili powder, coriander powder, turmeric powder and marinate it well.
  • Keep it aside for further use.

 

For Tawa Masala

  • In a tawa, add ghee, oil, once it’s hot, add cumin seeds, onions and saute it until translucent.
  • Add ghee, prepared masala, green chillies, tomatoes, butter, salt to taste and cook for 7-8 minutes on high flames.
  • Add water to adjust the consistency and cook it for a minute.
  • Transfer it to a tray and keep it aside for further use.

 

For Dry Masala

  • In a bowl, add degi red chili powder, coriander powder, turmeric powder, cumin powder and mix it well.
  • Keep it aside for further use.

 

For Sauteing Green Peas

  • In a tawa, add fresh green peas, ghee, water and cook for 5-6 minutes until cooked well.
  • Transfer it to a bowl and keep it aside for further use.

 

For Sauteing Chicken

  • In a tawa, add butter, once it’s hot, add marinated chicken and cook for 8-10 minutes on high flames.
  • Cut the chicken into small bite size pieces and cook it for 2-3 minutes.
  • Transfer it to a tray and keep it aside for further use.

 

For Chicken Tawa Pulao

  • On the same tawa, add butter, once it’s hot, add green capsicum, red bell pepper, and saute for a minute.
  • Add cooked rice, sauteed green peas, prepared tawa masala, sauteed chicken, salt to taste, a little splash of water and saute it well for a while.
  • Finish it with dry fenugreek leaves, butter, spring onion, fresh coriander leaves, garam masala and saute it for a minute.
  • Garnish it with tomato, cucumber, onions, cabbage, boiled eggs, lemon wedge, green chillies, ginger, butter and coriander sprig.
  • Serve hot.
