Ingredients

For First Marination

8 no Chicken Drumsticks, चिकन टंगड़ी

Salt to taste, नमक स्वादअनुसार

2-3 Green chillies, less spicy, chopped, हरी मिर्च

1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tbsp tender Coriander stem, finely chopped, धनिया के डंठल

3 tbsp Curd, beaten, दही

 

For Masala

¼ tsp Fenugreek seeds, मेथी दाना

12-15 Black peppercorns, काली मिर्च के दाने

5-6 Green cardamom, हरी इलायची

1 Black cardamom, बड़ी इलायची

2 Cloves, लॉन्ग

½ inch Mace, जावित्री

¼ tsp Dry fenugreek leaves, कसूरी मेथी

Salt to taste, नमक स्वादअनुसार

 

For Second Marination

2-3 heaped tbsp Plain Cheese spread, चीज़ स्प्रैड

⅓ cup Hung curd, टंगा हुआ दही

1 tsp Lemon juice, नींबू का रस

Salt to taste, नमक स्वादअनुसार

½ tsp roasted Gram flour, भुने चने का बेसन

few Mint leaves, finely chopped, पुदीने के पत्ते

1 tsp Prepared Masala, तैयार किया हुआ मसाला

First Marination Juice, पहले मैरीनेशन के पानी

 

For Cooking First Marinated Chicken

1 tbsp Ghee, घी

1 Black cardamom seeds, काली इलायची के दाने

2-3 Cloves, लॉन्ग

2-3 Bay leaf, तेजपत्ता

First Marinated Chicken, पहले मैरिनेटेड चिकन

 

 

For Smoke

Coal, कोयला

½ tsp Ghee, घी

2 Cloves, लॉन्ग

 

Other Ingredients

Ghee for brushing,  घी

 

For Garnish

Onion, slice, प्याज

Tomato, julienned, टमाटर

Capsicum, julienned, शिमला मिर्च

Lemon wedge, नींबू की फांक

Coriander sprig, धनिया पत्ता

 

Process

For Cutting Drumsticks

  • Slit the drumstick on the bottom and remove the excess fats, and place the drumsticks in a mixing bowl.

 

For First Marination

  • In a mixing bowl, add salt to taste on drumsticks, add green chilli, ginger garlic paste, coriander stem, curd and mix it well and keep it aside for further use.

 

For Masala

  • In a small plate, add fenugreek seeds, black peppercorns, green cardamom, black cardamom, cloves, mace, dried fenugreek leaves and salt to taste.
  • Transfer it into a grinder jar and grind it into a fine powder. Keep aside for further use.

 

For Second Marination

  • In a mixing bowl, add plain cheese spread, hung curd, roasted gram flour, lemon juice, salt to taste, mint leaves, prepared masala and mix it well.
  • Add the first marination juice and mix everything well.
  • Apply the marination on cooked drumsticks and keep it aside for further use.

 

For Cooking

  • In a shallow pan or kadhai, add ghee once it gets hot, add first marinated chicken.
  • Cover it with the lid and cook on medium flame until 70 to75% done.
  • When it’s cooked well. Switch off the flame and remove the drumstick in a tray.
  • Keep the first marination juice for further use.
  • Apply the marination on cooked drumsticks and keep it aside for further use.
  • Now, put the marinated chicken in skewers and cook on medium flame.
  • Cook from both the sides nicely. Remove it on a plate, apply ghee on it.
  • Garnish it with coriander sprig, lemon wedge, onion, tomato and Serve hot .
