Ingredients

For Dough

2 tbsp Milk, दूध

1 tsp Yeast, यीस्ट

Water as required, पानी

1 tsp Sugar, चीनी

500 gms Refined flour, मैदा

½ tsp Oil, तेल

 

For Cooking Chicken

1 ½ tbsp Oil, तेल

7-8 large Tomatoes (puree), टमाटर प्यूरी

1 tbsp Ghee, घी

Salt to taste, नमक स्वादअनुसार

3-4 no. Green chillies (less spicy & finely chopped) हरी मिर्च

1 tbsp Tender Coriander stems (finely chopped), धनिये के डंठल

3-4 no. Garlic cloves (chopped), लहसुन

600 gms Chicken thighs, चिकन

Salt to taste, नमक स्वादअनुसार

1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 heaped tsp Coriander powder, धनिया पाउडर

3 heaped tbsp Curd (beaten), दही

1 tbsp Oregano, ओरिगेनो

½ tbsp Chilli flakes, चिल्ली फ्लेक्स

 

For Garlic Mayonnaise

15-18 no. Garlic cloves, लहसुन

1 cup Mayonnaise, मेयोनेज़

 

For Salad

2 medium Tomatoes, sliced, टमाटर

2 ½ medium Onions, sliced, प्याज

4 no. Green chillies (less spicy & finely chopped) हरी मिर्च

⅓ cup fresh Coriander leaves (finely chopped), धनिया पत्ता

1 tsp Lemon juice, नींबू का रस

Salt to taste, नमक स्वादअनुसार

 

For Assembling Shawarama

Prepared roti, तैयार की हुई रोटी

Prepared garlic mayonnaise, तैयार किया हुआ गार्लिक मेयोनिज

Prepared salad, तैयार किया हुआ सलाद

Cooked chicken (cut into thin strips), पका हुआ चिकन

1 tbsp Butter, मक्खन

 

For Assembling Bao

Cooked bao, पका हुआ बाओ

Prepared garlic mayonnaise,  तैयार किया हुआ गार्लिक मेयोनिज

Prepared salad, तैयार किया हुआ सलाद

Cooked chicken (cut into thin strips), पका हुआ चिकन

 

For Garnish

Coriander sprig, धनिया पत्ता

Chilli oil, चिल्ली ऑइल

Tomato ketchup, टमाटर केचप

Process

For Dough

  • In a bowl, add milk, yeast, water as required, sugar and give it a good mix until sugar gets dissolved.
  • Add refined flour and make it a semisoft dough.
  • Apply oil on dough, cover it with damp cloth and leave it aside for fermenting.
  • Knock back the dough and knead it again for a minute.
  • Divide the dough into medium lemon size balls and leave it aside for a while.
  • Take dough balls and make a thin roti of it.
  • Heat tawa, place prepared roti and cook it on both sides.
  • Take another dough ball for bao, make it a thick roti like pizza base.
  • Fold the roti from the middle and place parchment sheet pieces in between to prevent layers from sticking to each other.
  • Transfer the prepared baos into a steamer and cook it for 10-12 minutes on medium flames or until cooked well.
  • Transfer the cooked baos to a tray and keep it aside for further use.

For Cooking Chicken

  • In a handi or kadai, add oil, once it’s hot, add tomato puree, ghee, salt to taste and cook it for 2-3 minutes on high flames.
  • Add green chillies, tender coriander stems, garlic and let it cook for a while until oil separates from the masala.
  • Add chicken, salt to taste, degi red chili powder, coriander powder, curd and cook it for 7-8 minutes on medium flames.
  • Finish it with oregano, chilli flakes and give it a good mix.
  • Transfer the chicken to a tray and keep it aside for further use.

For Garlic Mayonnaise

  • In a mixer grinder jar, add garlic, mayonnaise and grind it into a smooth paste.
  • Keep it aside for further use.

For Salad

  • In a bowl, add tomatoes, onions, green chillies, fresh coriander leaves, lemon juice, salt to taste and give it a good mix.
  • Keep it aside for further use.

For Assembling Shawarama

  • Take prepared roti, spread some prepared garlic mayonnaise, place prepared salad, add cooked chicken and roll it like a roll.
  • In a pan, add butter, once it melts, place prepared shawarma roll and cook it on all sides.
  • Transfer it to a serving platter and serve hot with prepared garlic mayonnaise.
  • Serve hot.

For Assembling Bao

  • Take cooked bao buns, spread some prepared garlic mayonnaise, place prepared salad and cooked chicken.
  • Garnish it with coriander sprig, chilli oil and tomato ketchup.
  • Transfer it to a serving platter and serve hot with prepared garlic mayonnaise.
  • Serve hot.
