Ingredients
For Bhindi Butter Masala
1 tbsp Oil, तेल
2-3 tbsp Butter, cubed, मक्खन
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 large Onions, chopped, प्याज
2 no. Bay leaf, तेज पत्ता
2 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
2-3 tbsp Curd, beaten, दही
½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Butter, cubed, मक्खन
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
½ cup Water, पानी
¼ cup Fresh cream, optional, ताज़ा मलाई
Sauteed Lady finger, सौतेद भिंडी
2 tbsp Coriander leaves, chopped, धनिया पत्ता
2 tbsp Butter, cubed, मक्खन
½ tsp Dry fenugreek leaves, crushed, कसूरी मेथी
For Sauteing Bhindi
2-3 tbsp Mustard oil, सरसों का तेल
1 tsp Cumin seeds, जीरा
2 medium Onions, sliced, प्याज
1 kg Lady finger (trim the head & tale) भिन्डी
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2-3 medium Tomatoes, diced, टमाटर
For Ginger Garlic Paste
2-3 no. Green chillies (less spicy & broken) हरी मिर्च
5-6 no. Garlic cloves, लहसुन
1 ½ inch Ginger (peeled & roughly chopped) अदरक
For Garnish
Coriander sprig, धनिया पत्ता
Butter, cubed, मक्खन
Ginger, Julienned, अदरक
Process
For Bhindi Butter Masala
- In a kadai, add oil, butter, once it’s hot, add prepared ginger garlic paste and saute it for a minute.
- Add onions, bay leaf and saute it until golden in color.
- Add turmeric powder, degi red chili powder, coriander powder and cook it for a minute.
- Add curd and mix it well, add tomato puree, salt to taste and saute it well until cooked well.
- Add butter, tender coriander stems and cook it well.
- Add water, fresh cream and cook for 3-4 minutes until thickens.
- Add sauteed bhindi, coriander leaves, and cook it well.
- Finish it with butter, dry fenugreek leaves and mix it well.
- Transfer it to a serving dish, garnish it with coriander sprig, butter and ginger juliennes.
- Serve hot with roti.
For Sauteing Bhindi
- In a pan, add mustard oil, once it’s smoky hot, add cumin seeds and let it splutter.
- Add onion, bhindi, salt to taste, turmeric powder, degi red chili powder and cook it for 5-6 minutes until golden in color on low flames.
- Add tomato and mix it well.
- Keep it aside for further use.
For Ginger Garlic Paste
- In a mortar pestle, add green chilies, garlic cloves, ginger and grind it coarsely.
- Keep it aside for further use.
