Ingredients

For Cleaning Veggies

2 medium Cauliflower, cut into medium florets, फूलगोभी

Salt to taste, नमक स्वादअनुसार

2-3 cups Water, पानी

 

For Paste

2 inch Ginger (peeled & roughly sliced) अदरक

1 no. Green chili (less spicy & roughly chopped) हरी मिर्च

1 tbsp Tender Coriander stems with roots, roughly chopped, धनिये के डंठल और जड़ें

1 cup Curd, beaten, दही

 

For Adraki Aloo Gobhi

2-3 heaped tbsp Mustard oil, सरसों का तेल

1 tsp Cumin seeds, जीरा

Prepared paste, तैयार किया हुआ पेस्ट

½ tsp Turmeric powder, हल्दी पाउडर

1 heaped tsp Coriander powder, धनिया पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

A pinch of asafoetida, हींग

4-5 medium Potatoes (peeled & roughly diced) आलू

¼ cup Water, पानी

2 medium Cauliflower, cut into medium florets, फूलगोभी

Salt to taste, नमक स्वादअनुसार

1-2 tsp Lemon juice, नींबू का रस

1 inch Ginger (peeled & julienned) अदरक

2 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च

2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता

½ tbsp Ghee, घी

 

For Dhaba Style Aloo Gobhi

Prepared sabji, तैयार की हुई सब्जी

¼ cup Water, पानी

 

For Garnish

1 inch Ginger (peeled & julienned) अदरक

1 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च

Coriander sprig, धनिया पत्ता

Process

For Cleaning Veggies

  • In a bowl, add cauliflower, salt to taste, water and mix it well.
  • Keep it aside to soak for a while.
  • Strain the cauliflower and transfer it into the tray or bowl.
  • Keep it aside for further use.

 

For Paste

  • In a bowl, add ginger, green chili, tender coriander stems and curd.
  • Transfer it to a mixer grinder jar and grind it into a smooth paste.
  • Keep it aside for further use.

For Adraki Aloo Gobhi

  • In a kadai, add mustard oil, once it’s smoky hot, add cumin seeds and let it splutter.
  • Add prepared paste, turmeric powder, coriander powder, degi red chili powder, a pinch of asafoetida and cook for a while.
  • Add potatoes, water and cook for 2-3 minutes.
  • Add cauliflower, salt to taste and give it a mix.
  • Cover it with a lid and cook it for 12-15 minutes on medium flames.
  • Finish it with lemon juice, ginger, green chillies, fresh coriander leaves, ghee and toss it gently.
  • Transfer it to a serving dish, garnish it with ginger, green chillies and coriander sprig.
  • Serve hot with roti.

For Dhaba Style Aloo Gobhi

  • In the same kadai or pan, add prepared sabji, water and give it a quick boil.
  • Transfer it to a serving dish, garnish it with ginger, green chillies and coriander sprig.
  • Serve hot with roti.
