Ingredients
For Mutton Tahari
3-4 tbsp Oil, तेल
3 tbsp Ghee, घी
4 large Onion, sliced, प्याज
1 ½ kg Mutton with bones, मटन
Prepared ginger garlic paste, अदरक लहसुन का पेस्ट
1 ⅓ cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tbsp Turmeric powder, हल्दी पाउडर
1 inch Cinnamon stick, दालचीनी
2-3 no. Bay leaf, तेज पत्ता
2 no. Black cardamom, बड़ी इलायची
5-6 no. Green cardamom, हरी इलायची
2-3 no. Cloves, लौंग
1 ½ cups Water, पानी
4 large Potatoes (peeled & diced) आलू
1 cup Water, पानी
1 tbsp Tender Coriander stem, chopped, धनिये के डंठल
5-6 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
2-3 tbsp Coriander leaves, roughly torn, धनिया पत्ता
1 kg Sella Basmati rice (washed) सेला बासमती चावल
2 cups Water, पानी
5-6 no. Bhavnagri chillies, roughly chopped, भावनगरी मिर्च
3 large Tomatoes, roughly chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
1 tbsp Mango pickle, आम का अचार (optional)
4-5 cups Water, पानी
For Ginger Garlic Paste
4-5 no. Green chillies (less spicy & cut into half) हरी मिर्च
2 inch Ginger (peeled & sliced) अदरक
12-15 no. Garlic cloves, लहसुन
For Onion Salad
3 medium Onions, sliced, प्याज
5-6 no. Green chillies (less spicy & chopped) हरी मिर्च
2 tbsp Lemon juice, नींबू का रस
2-3 tbsp Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Fried onion, तले हुए प्याज
Process
For Mutton Tahariuchnowi mutton pulao
- In a handi, add oil, ghee, once it’s hot, add onions and saute until golden in colour.
- Add mutton with bones, prepared ginger garlic paste and saute it for 4-5 minutes on high flames.
- Add curd, degi red chili powder, turmeric powder, salt to taste and cook it for 10-12 minutes.
- Add bay leaf, black cardamom, green cardamom, cinnamon stick, cloves, water and mix it well.
- Cover it with a lid and cook it for a while until cooked well.
- Add potatoes and let it cook for a while.
- Add water, tender coriander steams and mix it well.
- Add green chillies, coriander leaves, sella basmati rice, water, bhavnagri chillies, tomatoes, salt to taste, mango pickle and water.
- Cover it with a lid and cook it for a while until cooked well.
- Open the tahri and let it rest for a few minutes.
- Transfer it to a serving dish and garnish it with coriander sprig and fried onion.
- Serve hot with onion salad.
For Ginger Garlic Paste
- In a mortar pestle, add green chillies, ginger, garlic and grind it coarsely paste.
- Keep it aside for further use.
For Onion Salad
- In a bowl, add onion, green chillies, lemon juice, coriander leaves, salt to taste, degi red chilli powder and mix it well.
- Transfer it to a serving bowl and serve with prepared mutton tahari.
