Ingredients

For 1st Marination

400 gms Paneer (cut into thick slabs), पनीर

Salt to taste, नमक स्वादअनुसार

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

1 ½ tsp Lemon juice, नींबू का रस

 

For 2nd Marination

2 heaped tbsp Mayonnaise, मेयोनेज़

2 heaped tbsp Curd (beaten), दही

1 tsp Gram flour, बेसन

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

A pinch of turmeric powder, हल्दी पाउडर

A pinch of garam masala, गरम मसाला

½ tsp Coriander powder, धनिया पाउडर

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tsp Lemon juice, नींबू का रस

Salt to taste, नमक स्वादअनुसार

1 tsp Mustard oil, सरसों का तेल

Marinated Paneer, मैरीनेट किया हुआ पनीर

 

For Dough

2 cups Refined flour, मैदा

½ tsp Carom seeds, अजवाइन

1 tbsp Oil, तेल

Salt to taste, नमक स्वादअनुसार

Water as required, पानी

 

For Dry Masala

Salt to taste, नमक स्वादअनुसार

1 heaped tbsp Cumin seeds, जीरा

½ tbsp Fennel seeds, सौंफ

1 heaped tbsp Black peppercorns, काली मिर्च के दाने

5-6 no. Black cardamom, बड़ी इलायची

 

For Frying Paneer

2 tbsp Oil, तेल

Marinated paneer, मैरीनेट किया हुआ पनीर

 

For Samosa Stuffing

Remaining marination, बचा हुआ मैरिनेशन

1 cup fresh Green peas, हरे मटर

Water as required, पानी

Cooked paneer (roughly chopped), पका हुआ पनीर

4-5 no. Green chillies (less spicy & finely chopped), हरी मिर्च

2-3 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता

¼ cup Nylon sev, नायलॉन सेव

2-3 tbsp Prepared masala, तैयार किया हुआ मसाला

 

For Making Samosa

Prepared dough, तैयार किया हुआ आटा

Little water, पानी

Prepared stuffing, तैयार की हुई स्टफिंग

Samosa patti, समोसा पट्टी

Prepared stuffing, तैयार की हुई स्टफिंग

Refined flour slurry, मैदा का घोल

 

Other Ingredients

1-2 tsp Oil (for rolling dough), तेल

Oil for frying, तलने के लिए तेल

 

For Garnish

Fried chillies, तली हुई मिर्च

Lemon wedges, नींबू की फांक

Coriander sprig, धनिया पत्ता

Process

For 1st Marination

  • In a tray, add paneer, sprinkle some salt to taste, degi red chili powder, add lemon juice and mix it well.
  • Keep it aside to marinate for a while.

 

For 2nd Marination

  • In a bowl, add mayonnaise, curd, gram flour, degi red chili powder, turmeric powder, garam masala, coriander powder, ginger garlic paste, lemon juice, salt to taste, mustard oil, marinated paneer and give it a good mix.
  • Keep it aside for further use.

 

For Dough

  • In a bowl, add refined flour, carom seeds, oil, salt to taste, water as required and make it semisoft dough.
  • Cover it with damp cloth and leave it aside for further use.

 

For Dry Masala

  • In a pan, add salt to taste, cumin seeds, fennel seeds, black peppercorns, black cardamom and roast them for 2-3 minutes.
  • Transfer it to a tray and keep it aside to cool down at room temperature.
  • Transfer the spice into a mixer grinder jar and grind it into a fine powder.
  • Keep it aside for further use.

 

For Frying Paneer

  • In a pan, add oil, once it’s hot, add marinated paneer and sear it for a while until cooked well.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Samosa Stuffing

  • In the same pan, add remaining marination, fresh green peas and let it cook for 4-5 minutes.
  • Add water as required and cook it for a while until cooked well.
  • Transfer it into a bowl, add cooked paneer, green chillies, fresh coriander leaves, nylon sev, prepared dry masala and give it a good mix.
  • Keep it aside for further use.

 

For Making Samosa

  • Take prepared dough, divide it into medium lemon size balls and make a thin rotis.
  • Apply little water on edges, fill it up with prepared samosa stuffing and make a potli shape.
  • Heat oil in a kadai, place prepared potli samosas and fry them until crispy and golden brown.
  • Transfer it to a serving platter, garnish it with fried chillies, lemon wedges and coriander sprig.
  • Serve hot with green & tamarind chutney.
  • Take readymade samosa patti, apply refined flour slurry on edges, stuff it with prepared samosa stuffing and make it a small triangle shaped samosa.
  • Coat it well with refined flour from all the sides.
  • Transfer it into a hot oil and fry them until crispy and golden brown.
  • Transfer it to a serving platter, garnish it with fried chillies, lemon wedges and coriander sprig.
  • Serve hot with green & tamarind chutney.
