Here's a special recipe for the festive season ahead, straight from the heart ♥️
Ingredients
For Poha Kheer
1 ½ ltr Milk, दूध
2 no. Green cardamom, crushed, हरी इलायची
7-8 no. Almonds, chopped, बादाम
3 cups Poha, washed, पोहा
1 cup Condensed milk, कंडेंस्ड मिल्क
¼ cup Sugar, चीनी
Fried nuts, तले हुए मेवे
For Frying Nuts
2-3 tbsp Ghee, घी
10-12 no. Raisins, किशमिश
10-12 no. Cashew Nuts, काजू
For Poha Ladoo
2-3 tbsp Ghee, घी
3 no. Ripe Bananas (peeled & sliced) केले
1 cup Jaggery, गुड़
½ cup Dessicated coconut, optional, नारियल का बुरादा
½ cup Almond powder, optional, बादाम का पाउडर
1 ½ cups Poha, washed, पोहा
½ tsp Cardamom powder, इलायची पाउडर
Few Saffron strands, optional, केसर
For Garnish
Pistachio powder, पिस्ता का पाउडर
Almonds, sliver, बादाम
Few Saffron strands, केसर
Process
For Poha Kheer
- In a saucepot, add milk, cardamom, almonds and let it boil for a while.
- Add washed poha and cook it for 5-6 minutes until it’s cooked.
- Add condensed milk, sugar, and give it a quick boil.
- Finish it with fried nuts and give it a good mix.
- Transfer it to a serving bowl, garnish it with pistachio powder, almonds sliver and a few saffron strands.
- Serve hot.
For Frying Nuts
- In a pan, add ghee, once it’s hot, add raisins, cashew nuts and toss until golden in colour.
- Keep it aside for further use.
For Poha Ladoo
- In a pan, add ghee, once it’s hot, add ripe banana, jaggery and cook it until the jaggery is cooked.
- Add desiccated coconut, almond powder and saute it for a minute.
- Add washed poha, cardamom powder, a few saffron strands and give it a good mix.
- Transfer the mixture into the tray and leave it aside to cool down at room temperature.
- Divide the mixture into small lemon size balls and make it the desired shape.
- Transfer it to a serving platter, garnish it with pistachio powder, almonds sliver and a few saffron strands.
