Ingredients
For Cooking Mutton
1 tbsp Ghee, घी
2 tbsp Oil, तेल
2 no. Black cardamom, बड़ी इलायची
1 no. Bay leaf, तेज़ पत्ता
½ inch Cinnamon stick, दालचीनी
2-3 no dry Kashmiri red chillies, broken into half, सूखी कश्मीरी लाल मिर्च
1 tsp Black peppercorns, काली मिर्च के दाने
1 kg Mutton with bones, मटन
5 medium Tomatoes, टमाटर
Salt to taste, नमक स्वादअनुसार
1 ⅓ cup Curd, beaten, दही
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tbsp Coriander powder, धनिया पाउडर
½ tsp Cumin powder, जीरा पाउडर
1 tbsp Tender Coriander stem, roughly chopped, धनिये के डंठल
For Masala
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
½ inch Mace, जावित्री
2 no. Cloves, लौंग
5 no. Black cardamom, बड़ी इलायची
2 inch Cinnamon stick, दालचीनी
1 no. Bay leaf, तेज़ पत्ता
2 tbsp Coriander seeds, धनिये के बीज
1 tsp Cumin seeds, जीरा
2 no. Green cardamom, हरी इलायची
Salt to taste, नमक स्वादअनुसार
For Lahori Mutton
3-4 heaped tbsp Oil, तेल
1 no. Bay leaf, तेज़ पत्ता
1 tsp Cumin seeds, जीरा
3 large Onions, roughly sliced, प्याज
1 inch Ginger (peeled & finely chopped) अदरक
4-5 no. Garlic cloves, crushed, लहसुन
Cooked mutton, पका हुआ मटन
2-3 tbsp Prepared masala, तैयार किया हुआ मसाला
½ inch Ginger (peeled & julienned) अदरक
2 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
2-3 tbsp fresh Coriander leaves, roughly torn, धनिया पत्ता
For Garnish
¼ inch Ginger (peeled & julienned) अदरक
2 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च
Coriander sprig, धनिया पत्ता
Process
For Cooking Mutton
- In a pressure cooker, add ghee, oil, once it’s hot, add black cardamom, bay leaf, cinnamon stick, dry kashmiri red chillies, black peppercorns and let it splutter well.
- Add mutton with bones and cook it for a minute.
- Add tomatoes, salt to taste, curd, degi red chili powder, coriander powder, cumin powder, tender coriander stems and give it a good mix.
- Cover it with the lid and cook for 7-8 whistles until cooked well.
- Keep it aside for further use.
For Masala
- In a tray or bowl, add black peppercorns, mace, cloves, black cardamom, cinnamon stick, bay leaf, coriander seeds, cumin seeds, green cardamom and salt to taste.
- Transfer it to a mixer grinder jar and grind it into fine powder.
- Keep it aside for further use.
For Lahori Mutton
- In a handi, add oil, once it’s hot, add bay leaf, cumin seeds and let it splutter well.
- Add onions, ginger, garlic and saute it until golden in colour.
- Add cooked mutton, prepared masala and saute it for 10-12 minutes or until cooked well.
- Finish it with ginger, green chillies, prepared masala, dry fenugreek leaves, fresh coriander leaves and give it a good mix.
- Transfer it to a serving dish, garnish it with ginger, green chillies and coriander sprig.
- Serve hot with paratha or tandoori roti.
