Ingredients

For Masala Fried Paneer

700 gms Paneer, sliced, पनीर

Salt to taste, नमक स्वादअनुसार

2-3 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

1 tsp Cumin powder, जीरा पाउडर

2 tsp Coriander powder, धनिया पाउडर

2-3 tbsp Oil, तेल (for shallow frying)

 

For Cutlet Mixture

2-3 tbsp Oil, तेल

Remaining masala oil, बचा हुआ तेल

2 medium Onions, grated, प्याज

1 ½ inch Ginger (peeled & grated) अदरक

4 no. Green chillies (less spicy & chopped) हरी मिर्च

1 large Carrot (peeled & grated) गाजर

1 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें

5-6 medium Potatoes (boiled & grated) आलू

Salt to taste, नमक स्वादअनुसार

2-3 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

Masala fried paneer, grated, तैयार किया हुआ मसाला फ्राइड पनीर

3-4 no. Bread slices (trim the edges & cubed) ब्रेड स्लाइस

1 tbsp Semolina, सूजी

Salt to taste, नमक स्वादअनुसार

1 tsp Black pepper powder, काली मिर्च का पाउडर

 

For Tadka Ketchup

1 tbsp Oil, तेल

½ tsp small Mustard seeds, छोटी राई

1 sprig Curry leaves, roughly chopped, करी पत्ता

2-3 no. Green chillies (less spicy & chopped) हरी मिर्च

½ tsp Chili flakes, चिली फ्लेक्स

⅓ cup Tomato Ketchup, टमाटर केचप

½ cup Water, पानी

 

For Cornstarch Slurry

1 cup Cornstarch, कॉर्नस्टार्च

½ cup Water, पानी

Salt to taste,  नमक स्वादअनुसार

 

Other Ingredients

1 cup fresh Bread crumbs ( for coating) ताज़े ब्रेड क्रम

Oil for frying, तलने के लिए तेल

 

For Garnish

Coriander sprig, धनिया पत्ता

Lemon wedges, नींबू की फांक

Process

For Masala Fried Paneer

  • In a parat, add paneer slices, sprinkle some salt to taste, degi red chili powder, cumin powder, coriander powder and marinate it well from both the sides.
  • In a pan, add oil, once it’s hot, add marinated paneer and shallow fry it for a while until golden brown.
  • Transfer it to an absorbent sheet and keep it aside for further use.

 

For Cutlet Mixture

  • In a pan, add oil, remaining oil, once it’s hot, add onion and saute it for a minute until translucent.
  • Add ginger, green chilies and saute it for a minute.
  • Add carrot and cook it well for a while.
  • Add tender coriander stems, potatoes, coriander leaves and mix it well.
  • Add prepared masala fried paneer, bread slices, salt to taste, black pepper powder, give it a good mix and cook it for 2-3 minutes on medium flames.
  • Transfer it to a bowl and keep it aside to cool down at room temperature.
  • Take a lemon size ball and give it a desired shape.
  • Dip the prepared balls in cornstarch slurry and coat it well with bread crumbs.
  • Transfer it to a hot and shallow fry it until golden brown.
  • Transfer it to a serving dish, garnish it with coriander sprig and lemon wedges.
  • Serve hot with prepared tadka ketchup dip.

 

For Tadka Dip

  • In a pan, once it’s hot, add mustard oil and splutter it well.
  • Add curry leaves, green chillies, a pinch of chili flakes and cook it for a minute.
  • Add tomato ketchup, water and simmer it for 4-5 minutes until it thickens.
  • Transfer it to a serving bowl and serve with a prepared paneer cutlet.
